Warm vegetarian breakfast roll fillings

Looking for warm vegetarian fillings for bread rolls as an alternative to bacon butties. Not tofu as not liked by the main person I'd be making these for.

My go to is baked portobello mushrooms, sometimes with cheese; plant based sausages; or cheese, spinach & onion,
Looking for some different options please.

DP had a potato scone, veggie haggis and mushroom cob in Edinburgh, and was very pleased with it.

Nigella has a field mushroom in a roll thingie - I’d look up that. I seem to have fond memories of garlic butter running down my arm..

Richmond veggie sausages are the most awful things I've ever eaten, and I am veggie.

Nasty twangy skins that turn my stomach. Urgh.

Agree with all the fans of vegetarian haggis. Even nicer with fried mushrooms or fried mushrooms and onions. My DH likes veg haggis (minus the mushrooms) with mango chutney, but it also goes quite well with traditional pickle such as Branston.

Roast Mediterranean veg (peppers, tomatoes, aubergines, onions, garlic ) or roast fennel, sweet potato, leek, celery with feta or sliced mozarella balls. Ideally served with lots of watercress and a sharp vinagrette type dressing.

Home-made coleslaw plus grated extra-strong cheddar. Add crisp lettuce if liked. And mini tomatoes with some flavour - at this time of year that probably means posh ones.

Hummus, grated carrot in a little lemon juice, lots of fresh parsley and/or very finely chopped raw red pepper, all drizzled with harissa powder mixed with a little olive oil. Nicest in a brown seeded roll and served with chicory (witloof).

Courgette fritters with chopped spring onions and lots of fresh green herbs and lots of grated parmesan plus tiny cubes of a melty cheese such as emmenthal. A way of disguising eggs, perhaps?

Falafel with or without fried aubergine slices, chips and cauliflower with garlic tahini dressing and sliced red raw onions.

Olive tapenade spread with mozarella or hallumi and tomatoes.

Nutella, peanut butter and bananas

Chickpea flour omelette

Calzone style or curried potato and veg like pasty filling.

Sweetpotato slices roasted, hummus spread and salad.

I’m not a tofu fan at all but thinly sliced firm smoked tofu cooked to a crisp is very nice

Richmond vegan sausages are lovely too
