Your best ever corned beef hash recipes please!

A friend mention corned beef hash earlier .... I've not had it since I was a kid and now I can't stop thinking about it! I'm really hankering after some nostalgic comfort food with the colder nights creeping in. I'd love your tried and tested recipes please (and other recipes of pure comfort would be a bonus!!) Thank you. Smile

Following because I've never known how it should be done.

We would do corned beef mashed with beans topped with mash and cheese.

But I'm Scottish, so stovies with beetroot and crusty bread is more our go to.

Not a recipe as such but I combine mashed potato with a fried onion and a tin of corned beef. Mix well then fry the whole lot till nice and crispy.
I fancy corned beef hash now!

@carddino that's exactly why I'm asking because I looked at a load of recipes online and they're all frustratingly different - I need to know which one is the nicest before I commit as corned beef is bloody expensive these days Grin

I seem to remember my mum doing fried onions and cubes of potato then one of those tins you use the twisty key thing to open. No idea on a recipe or other ingredients.

I make a corned beef “cottage pie “ so fry the corned beef with softened onions, tomato purée and Worcester sauce and top with buttery mash and grated cheddar and cook in oven for 30 minutes. Serve with baked beans on the side 😋

I fry onion then add cubed potatoes and fry until crispy. I then add a can of baked beans and cubed corned beef, a splash of Worcester sauce and simmer for a bit. I then sprinkle on grated cheese, and recipe says to grill but I don't usually bother.

I like the sound of that, in fact even more than the regular cottage pie I usually make! Not sure the rest of the family would eat it, might have to try it just for myself 😋

Tin of corned beef fried with some mixed herbs and pepper until the fat starts to ooze out. Chuck in a finely diced onion, fry until translucent. Add a squeeze of ketchup. Mix it all up with mashed potato until it's a pan of pink paste.
Put in a casserole dish and bake in the oven, sprinkled with cheese, until golden brown.
Serve with baked beans and bread and butter. Ultimate comfort food.

I do a really simple version that is loved by DH and DS:

Boil then mash potatoes, add a tin of corned beef and mash into the potatoes - leave to fry off a little (plenty of fat in the corned beef, no need to add more). Meanwhile fry up some onions and fried eggs. Serve with baked beans 🤷‍♀️

My gran use to do the fried up onion, potatoes cubes and corned beef - no baked beans -and then there was some kind of grav?? And it was called pinaculty (sp?). It's like the memory of a meal now that has faded with time but I'd love to have it again.

I just dice onions and cook them in beef dripping, then remove the onions, add more dripping, fry cubes of raw potato until cooked, tip the onions back in with a tin of chopped-up corned beef, and hash it all together.

Crispy bits can be achieved by not turning it too often. I eat it with a fried egg and Worcestershire sauce on top.

Onions, tin of corned beef, loads of Worcestershire sauce, splash of red wine, baked beans and tinned potatoes.
Fry the onions first, then chuck everything else in.

I just layer sliced corned beef and raw onions in a casserole dish. Top with mashed potato and bake for AT LEAST 1.5 hours until the top is nice and crispy and serve with baked beans. 👌

My grandmother used to make it during the war. Apparently corned beef wasn’t rationed/you could get more for your rations.

Cold boiled potatoes and onions smashed down together and lightly fried in butter. Add mashed up corned beef and some black pepper. Serve with tinned plum tomatoes (how my mum did it in the eighties)

I do mine in the slow cooker.

1 onion, a few carrots, tin of chopped tomatoes, potatoes, corned beef.

I add beef stock and some Worcestershire sauce. I don't tend to add additional salt as the corned beef and stock are salty enough. Pepper and mixed herbs.

After a few hours I add gravy granules to the mixture to thicken up.

Its more like a stew than a hash but it's yummy and warming this time of year
