Your best ever corned beef hash recipes please!

A friend mention corned beef hash earlier .... I've not had it since I was a kid and now I can't stop thinking about it! I'm really hankering after some nostalgic comfort food with the colder nights creeping in. I'd love your tried and tested recipes please (and other recipes of pure comfort would be a bonus!!) Thank you. Smile

I boil potatoes, carrots ands onion in a pan until soft. Then transfer into a big dish mash it all together with chopped up corned beef from a tin a knob of butter, splash of milk and some salt and pepper. I sprinkle with grated cheddar and pop it in the oven on 180c for 30mins. I then cover in brown sauce and eat it out of toasted pitta breads 🤣

I do more like a stew too. Potatoes, diced carrot and turnip and sliced leeks and onions. Crumble up 3 stock cubes and cover with water and add a bay leaf, salt and pepper and worcestershire sauce then cook until almost done. Add in cubed corned beef and a tin of mixed beans. Just had it tonight and it's ideal for this weather

We had a stew version of this growing up.

Boil cubed potatoes and diced onions in a big soup pan until slightly softened.

Meanwhile, brown off sausages in the oven and chop them into pieces.

Add diced corned beef, sliced carrots and the sausages to the pan and boil for a bit longer.

When everything is pretty much done, add a tin of marrowfat peas and some beef gravy granules to thicken it a bit.

Serve with white bread to dip in.

I am learning lots reading this thread. The way my Mum used to do it was boil potatoes, carrots and onions (but in quite shallow water), with corned beef on top towards the end. Drain off any remaining water and then kind of mash it all together. No frying involved. Probably a bit rank if I tried doing this as an adult but I enjoyed it as a child!

My childhood version was definitely oven cooked rather than fried. I think it was just layers of onion, corned beef and slices of potato in a casserole dish (I didn't do the cooking but assume a small amount liquid was added to cook the potatoes). It was usually served with some vegetables on the side.

My version is simple, but unbelievably delicious.

Thinly slice potatoes, thinly slice onions.
Use a large tin of corned beef ( I use 1.5 tins, but I'm greedy) directly from the fridge - this is important, if it hasn't been in fridge, it mushes rather than slices.

Layer potatoes, onions, corned beef, potatoes, onions, corned beef, potatoes, slices of bacon ( stretch normal slices).

Add stock to just, just cover and cook onlow temp for hours, as long as you can rest the smell.

Serve with crusty bread.

This is the way I do it too but I add sliced raw carrots, turnip and any other root veg I have. Half fill the dish with a thin gravy, cover and cook for a couple of hours. Check all is soft and cooked through, remove cover for the last 30 mins to make sure the top goes crispy.

I do a cheat version when we need something quick, it's just corned beef chunks and instant mash mixed up, cheese on top, heat in the oven until the cheese is nicely melted. Serve with beans.

I fry off onions, then put them in an oven dish with corned beef and baked beans. Top with mashed potatoes and cheese, and bake in the oven. I always serve it with loads of gravy!

Camping special in our house - 2 large cans of tinned potatoes (cheap from Aldi/Lidl), drained and chopped. Fry up with a chopped onion until onion is soft. Add a tin of corned beef and fry more - you want some nice brown crispy bits. Serve with a fried eggs, baked beans, crusty bread and HP sauce.

I do the stew version
Soften onions, add chopped carrots and potatoes and just cover with water, boil until soft. Add chopped corned beef, oxo cubes, lea and perrins and pepper
No quantities because it's a cook for your own taste

Eat with buttered crusty bread, pickled red cabbage and brown sauce
