What cake shall I bake for myself?

I’ve decided to make myself a birthday cake next week. This isn’t a poor me. I like baking and it means I don’t need to factor in how much DH or DS will like it.
But what cake? I like most cakes except coffee cake.

If you like chocolate cake, then the Blackout Cake recipe from the Hummingbird bakery cookbook is fantastic. the icing is a sort of custard which makes it really rich and luxurious. I always ask my Mum to make it for my birthday.

Red Velvet's my favourite.

EllaMenopee · 13/11/2023 14:42

Nigella's old fashioned chocolate cake. I'd love a slice now.

Whataretheodds · 13/11/2023 14:51

Nigella's guiness or chocolate orange cake (whole jar of marmalade)

Properly gooey banana bread

Lemon sponge with lemon curd inside and lemon buttercream on top

Lemon drizzle
Dundee cake - possibly not fancy enough?
Victoria sponge with whipped cream and jam and/or fresh strawberries
Carrot cake with cream cheese frosting
Nigella's Guinness cake with cream cheese frosting

Happy birthday for next week!

I made this for my Dad's birthday last week and it was delicious.

Vegan, too, if that's your preference.

Some delicious ideas here. I’ve also been reminded how much I love lemon-based cakes.

Nigella’s chocolate orange cake looks amazing too. I think we have a pot of marmalade hanging around…

For me it's either a chocolate sponge cake, chocolate frosting middle and top, and those mini Rolos you can buy at this time of year scattered on top or a nice carrot/carrot & walnut cake but with butter frosting though not the cheese type.

NahBruh · 13/11/2023 16:40

I would do a Boston Cream Pie. Yum.

if choclate is your thing, this is good - made recently and it’s good as you don’t use butter. Choclate cake has a better texture imo when it’s not made with butter

No mixer? No problem! Our best chocolate cake recipe is ridiculously easy to bake. It's also moist, dark, and covered in chocolate ganache. Amazing.

If I can be bothered @NahBruh , I will make that. I’ve never heard of it.

@MikeRafone the orange cake is a maybe too. I’ve got that recipe saved as a potential cake for MIL.

Oh, and I’m leaning towards not a chocolate cake. It’s fun deciding and learning of new cakes 😁

I made the most delicious Victoria sponge last night with fresh cream, jam and fresh strawberries. Can't post a picture sadly as it went like that. My mum popped round for a coffee earlier and had the last slice.

Carrot cake with absolute dollops of cream cheese icing!

Oh yes this one is really lovely (with raspberry jam).

I make an orange blossom and cardamon cake, with orange blossom icing..its beautiful.

preggo39 · 13/11/2023 19:53

Nigella's vanilla layer cake. It's the most delicious cake in existence, and I've eaten a lot of cakes. It takes a bit of effort but it's so, so worth it.

Happy birthday!

FlutteryButterfly · 13/11/2023 20:14

If you enjoy baking have you made a start on your Christmas cake yet? 😆

MinnieMountain · 14/11/2023 04:46

Nah. MIL makes ours.
