I'm stalled ..chicken thighs?

Im having one of those days. My brain is a fog! Ideas and creativity are a black hole to me! Inspiration has fecked off.

What can I do with a heap of chicken thigh filllets for family dinner? (No skin, no bones). Hob, oven or air fryer.

An adaptation of an Elizabeth David recipe. Slice up 6 onions. Put in a heavy based pan or dish with a lid. Pour over a big slug of olive oil. Chicken thighs on top. Pour over more olive oil, and plenty of salt & pepper.
Cook in the oven at 180° for about an hour - I leave the lid off for the last ten minutes so the meat browns a little, but you don't have to. Add freshly chopped parsley. Serve with fried bread.
The original recipe uses a whole chicken and includes olives as well, which you add at the end. I've tried with chicken thighs and it worked a treat!

Seems like an insane amount of onion but it cooks down into a delicious chicken-y onion-y soupy sauce.

We have some recipes from meals by Mitch that involve thighs. Also we have a Nando's chicken meal and that works well with thighs

Slice each one lengthways, so you have long strips of chicken, then marinate in olive oil, garlic and lemon juice (salt and black pepper). Then thread them on to skewers and griddle (if you have a griddle) or fry/roast till nicely browned/charred.

This oven cooked shawarma recipe (I often slice some peppers on to the roasting pan with a splash of olive oil too before adding the chicken mix to up the veg content). Lovely with wraps and a Shiraz salad and some Greek yoghurt.

air fryer with a spice mix on top - cayenne pepper, salt, pepper, garlic granules. serve with roasted veg and some cheese sprinkled on top

This is fab and easy but needs a bit of time. I've also used basmati rice and gave the second part 40 mins instead of an hour.

Cut in half lengthwise, flour, season, egg and breadcrumbs. oven 30 mins. With homemade coleslaw at tomato salsa, depending on what needs using up
