I'm stalled ..chicken thighs?

Im having one of those days. My brain is a fog! Ideas and creativity are a black hole to me! Inspiration has fecked off.

What can I do with a heap of chicken thigh filllets for family dinner? (No skin, no bones). Hob, oven or air fryer.

Chop onto chunks, marinade in soy, ginger and sesame oil. Toss in panko/ breadcrumbs cook in oven/ air fryer.

Serve with rice, green veg, and dip in mayo ( ideally Japanese mayo)

Creamy Cajun chicken pasta / pasta bake. I made it yesterday with thighs and it delicious.

I rub them with seasoning, put in a large baking tray with whatever veg I've got in , normally courgettes, peppers, red onion chunks , mushrooms, cherry's tomatoes etc, cloves of garlic, bake and serve over rice with some rocket and coleslaw

The BBC Chicken arrabiatta is great even without the dumplings , I use red pesto and works perfectly

I use chicken thigh fillets instead of chicken breast in all my cooking. Fajitas or curry are favourites here. Or just slap soy, honey, garlic and ginger on them, air fry and have with rice and veg x

I sometimes make a very simple but good chicken casserole which derives ultimately from a recipe book of my Mum's. You brown the chicken (skinless works best, I think - breast or thigh both work) in a little butter. Then soften some diced carrot, celery and either leek or onion in the butter (add more if necessary). Put the chicken back, pour over some hot stock (not too much), season with salt and pepper and add a bouquet garni or other herb mixture. Tarragon works very well here. Cook on hob or oven until the chicken and veg are mostly done (half an hour?), then if liked stir in some sliced mushrooms and cook for a few more minutes. When ready to serve, stir through some cream and let it just bubble. We usually have this with potatoes in some form but it would work well with rice. Green vegetable on the side.

Chicken tacos. I sometimes have a packet of taco seasoning in but you can make your own if you gave all the spices in. Cut the chicken up and coat in the seasoning then pan fry.

All you need then is some mini wraps or taco shells, shredded lettuce, salsa/guacamole/sour cream/jalapenos/cheese as toppings.

It has become my kids' favourite way to eat chicken - even beats roast chicken for them now. Got to have it with the fried bread though...

OMG that looks delicious, I have four or five Elizabeth Davids but have never come across that recipe.
