I have two overgrown courgettes that were hidden away at the bottom of the plant.

Can you use them in the same way as normal courgettes or should I cook them differently? Any good courgettes recipes?

Those are well past their best, OP. I really wouldn’t, and I’m not that timorous about dinner.

Slice and brush with oil and seasoning. Put them in a hot griddle pan or on a BBQ. That's what I did with mine when I found one in the garden at the weekend.

Chop them up into small pieces. Then cut a few slices of bacon into and brown them in a pan. Throw in the courgettes and add a knob of butter. Throw in some peas and mint and when the courgette is browning take it off and sprinkle with parmigiano or the like.

We like the chopped up into tiny dice and roasted in olive oil ,herbs and garlic and stirred into risotto or pasta .
Great with some lemon zest and Parmesan

Grate them and freeze puck sized lumps, then add to curry or ragu or whatever to add bulk.

I always add grated courgette in with the onions when I'm making a curry. Works really well in a korma 😋

Those aren't overgrown courgettes- THESE are overgrown courgettes! 😂

If they aren't soft, you could use them as marrows. You might need to remove the seeds if they are large and pithy inside though. Here are some ideas:

Courgette brownies recipe | BBC Good Food Delicious, and no one will know there are courgettes in them! 😋

Make a quick soup with finely chopped onion gently fried, the grated courgettes, some soup pasta eg tiny shells, and some chicken or vegetable stock. Simmer until the pasta is cooked, it will only take a few minutes. Makes a lovely light lunch or first course, especially with some garlic bread.

Make courgette and cheddar soup with a pinch of nutmeg and freeze it. It'll be a blast of summer on a winter's evening.

Courgette and ginger jam

I'm sure they've been in something else.
Frankly I'm sick of them.

😀thanks for the recipes, so many good things to try! I do have some regular sized courgettes on the plant too.

cut iinto chunks, roast with onion halves and a couple of garlic cloves. sprinkle with curry powder. then blend into soup.
