I have two overgrown courgettes that were hidden away at the bottom of the plant.

Can you use them in the same way as normal courgettes or should I cook them differently? Any good courgettes recipes?

I've always got a stack of pasta sauces portioned up in the freezer and the giant courgettes that managed to hide go in along with passata,tomato puree, garlic, peppers, squash, carrots, herbs and chilli flakes, simmered for an hour and blended smooth.

Chop into cubes (remove the skin if it's especially thick) salt, pepper, mixed herbs and some oil. Airfryer until golden and crispy (I like them slightly burned on the edges) tip into a bowl, add grated cheddar while they're still warm and stir so it starts to soft and melt (could blast it again you like your cheese crispy too) and serve as a side (or eat with a spoon and some nice crusty bread)

THESE are overgrown courgettes!
I've made courgette cake, soup, fritters, roasted, pasta sauce, I've frozen it sliced, cubed and shredded. I saw a YouTube today of someone making jam with the blighters. I'm considering it. My sister makes chutney, which I don't like but haven't told her yet.
Help!!

Before you do anything with them, cut off a small chunk and try it raw. Discontinue if bitter, which would be my suspicion.

I have lovely neighbours who kindly provide me with their excess courgettes.

no specific recipes, but courgette works well as tomato substitute in sauces.
if you have a good carrot cake recipe substituting with courgette also works.

grate and cube some and freeze in portions to add to sauces, soups or stir fry.

I just cube and open freeze them, then throw them into a big bag. I add a handful of cubes when I'm doing soups/curries/whatever as extra nutrition.

One word: ratatouille!!

Courgette is my favourite vegetable, I'm loving all the courgette pics.

Also courgette curry.

Also courgette crisps (slice very thinly, drizzle with oil and grill).

Or simply roast in chunks with herbes de provence and lots of salt and olive oil. Pair with roast new potatoes and sausages.

They also go in a hearty sausage stew.

Spiralise, very briefly boil, and top with bolognese sauce for a low carb spaghetti.

My favourite veg. My MIL grew them last year and it was so joyful

There is a great Ottalenghi salad recipe with griddled courgettes and halloumi but it takes ages. My usual method with courgettes is cutting them in chunks, roasting them in olive oil for 15
mins then adding some pesto (ideally chilli pesto) and roasting them for another 15. Had that tonight in fact!

Sorry 😀i didn't think of that when writing the title! It feels like vegetable based humour has some room for expansion!

Anyway, big courgettes cut into cubes and slices. I tasted them and they are not bitter at all which is good. Freezer full but going to try the courgette and cheese soup mentioned above first.

Update on big yellow courgette, it is now jam. I used the BBC good food recipe for Marrow and ginger jam but I replaced one of the lemons with an orange. Took longer to soften (not really surprising) but it is very good. The courgette basically takes on all the citrussy flavours.

Me too! Mumsnet has seriously disappointed me with all these sensible recipe suggestions. Especially when it's 2 courgettes, not just the one! 🤭
