I use Thomasina Miers which is delicious but a long cook. Haven't made it in a while but would do it as a weekend batch cook and freeze it....

We use serious eats Texas chilli recipe it’s quite involved but tastes fantastic so we usually make a bigger batch and freeze

I cheat and use the kidney beans that are already in chilli sauce and then just add passata to stretch it out so it's more saucy. Mince, onions, pepper and probably a beef stock pot if I have them. If it's not spicy enough I add chilli powder till it is. It's a very lazy chilli but I like it!

I totally cheat and use

El Paso chilli mix x 2
Large red onion, 4-5 cloves garlic, red chilli, all finely chopped - sauté
750g mince - brown
Tin red beans, tin of black,
double shot of espresso,
2 glasses red wine
1 tin cherry tomatoes + 500g passata,
2 teaspoons cocoa ( not drinking choc, but 4 squares of very dark chocolate if that’s what you have)

In slow cooker for 5 hours on high,
Maje it day before you want to eat it. Feeds about 10 with rice.

Really easy

Chop onion and fry
Add mince, salt pepper till brown
Add
Oxo cube
Big teaspoon marmite
Big squirt tomatoe ketchup
Tin of chopped tomatoes
Tin of baked beans
Chilli powder to taste

Simmer for 20 minutes or jnrol you remember to take it off the stove

I find chilli always tastes better the following day, I always add some jalapenos and some juice from the jar too and lots of fresh coriander. Sometimes a bit of Maggi liquid seasoning too if I have some.

Chunk beef rather than minced, and if you are going to put beans in it, Black beans rather than Kidney.

If you have a specialist shop nearby then proper Chipotle chillies give it a nice, smokey depth. Diced chorizo works well too because the oil helps give the sauce that glossy sheen.

I try to maximise beef flavour by buying best mince and really searing it well then softening the onion , garlic, fresh chilli, cumin , beef stock, tinned toms, a spot of wine if available and the kidney beans. I might add some celery and carrot but much less than if I were doing spag bol; likewise tinned tomatoes. The main flavour should be of beef imo.if I have a pepper available I put that in when onion softened. Because there aren't many veg I would have some sort of salad on the side with lime and coriander .

I always use diced meat rather than mince too. The game changer though is adding a big spoonful of unsweetened cocoa powder. It adds a massive depth of flavour (and goes down brilliantly with the kids too!)

YES.

ingredients:
1 onion
2 green peppers
750g mince
2 cartons of passata
beef stockpot
Worcestershire sauce
1 splash of balsamic vinegar
3 squares of dark chocolate
1 teaspoon of sugar
tomato puree
3 tsp garlic powder
3 tsp ground coriander
4 tsp cumin
4 tsp smoked paprika
1 tsp cinnamon
3 tsp dried oregano
2 cayenne pepper (more or less, to taste)
1 tsp chipotle tabasco

optional:
kidney beans (Texans do not believe in kidney beans in chilli so I don’t but plenty do!)
sweetcorn
fried chorizo
fresh coriander

Method.

  1. chop and fry the onions and peppers in a little more oil than you think you need
  2. add all your dry herbs and spices to the onions and peppers, and fry them off for a minute or two so the spices aren’t raw.
  3. add the beef, beef stockpot and a LOT of Worcestershire sauce and brown the beef.
  4. add in a tablespoon of tomato puree and stir
  5. add in your first carton of passata and assess if you want to add more or not
  6. Add the balsamic, sugar and chocolate
  7. simmer until all lovely and rich and chilli-ish.
  8. Stir through the fresh coriander before serving

Get the kidney beans in chilli sauce, add some dark chocolate, loads of garnishes (sour cream, fresh chillies, coriander, salsa, jalepenos).
