After an accidental grocery order and a week of nursery crisis, I have just discovered I have 11 eggs expiring today.
Any favourite egg-heavy recipes?

Big family frittata for dinner.

Or just hard boil them all and have for snacks/egg mayo in the fridge. They keep a good few days once cooked.

Eggs don't go off like that...they'll last for ages after today.

They won't go off tomorrow. You can keep checking them in a water glass (should sink to the bottom). In my experience they last at leasst another week

Put them all in water. If they stay pretty much on their sides, they will still be fresh and no need to rush to use them

You could freeze them, crack them into an ice cube tray, sprinkle of salt, cover in cling film

I've got eggs a month passed their date. Just put them in a jug of water and they sink they are fine. Not the best for fried eggs, but fine for omelette, scrambled egg etc

As pp, do the water test to check they are fresh before use, they will have ages left on them yet.

as for the storing in water, I believe this has to be done with really fresh eggs, and you are supposed to add something to the water, so I wouldn’t do that.

Just to add to the water thing:

Sinking = perfectly fresh
Floating on surface = off, don't use them
Bobbing in the middle or standing on end = probably won't make the best poached eggs, but still totally fine to use.

Love it when people think everything goes off at midnight 😃.
We eat things way past their date and have lived to tell the tale.
Just look at it, sniff it, and use your common sense.

Eggs can last for weeks after their sell-by date. You'd be mad to panic-cook them all today, they'll be fine for ages yet!

Even the water trick isn't an accurate measure of whether they're 'off' - it just shows how big the air bubble is which grows the older they get. Break it into a cup - you will know VERY quickly if the egg is off, it stinks and is often black or green tinged. We use eggs up to three or four weeks after their best before dates, it's fine 🤷🏼‍♀️

They'll be fine for weeks - just use them as normal, you won't need to buy anymore for a week or two.

They won't expire tonight, good for ages afterwards usually, crack into a bowl before using, you'll know soon enough if they are gone off but in all my years of using eggs I'd say I've gotten maybe two bad ones and I often have eggs for at least a month after date on them.

I usually just do the water test because I can never read the smudged dates anyway.

Alternatively make omelettes and chocolate mouse for dinner.
