After an accidental grocery order and a week of nursery crisis, I have just discovered I have 11 eggs expiring today.
Any favourite egg-heavy recipes?

I never check the dates. If eggs have gone off it's obvious when you break them. They either smell or the yolk sinks. As others have says you can also check them before if you wish via the float test.

Egg curry

Egg Curry
This simple and delicious recipe was kindly recommended by curry enthusiast Den Browne. It originates from Anjum Anand's book 'Indian Food Every Day'.
Ingredients:
1 tbs veg oil
250ml hot water
Half small onion chopped
3 hard boiled eggs halved
Garlic clove
Half tsp garam masala
Bit of ginger
Ground black pepper
1 green chili
Tsp dry fenugreek leaves
Tsp coriander powder
Chopped fresh coriander
Half tsp chili powder
2 small tomatoes chopped or a small tin
Method:
Heat oil and gently fry onion until golden.
Add garlic, ginger, green chili, coriander powder turmeric, chili powder and salt.
Add tomatoes and cook on high heat for 5 mins.
Add water, bring to boil.
Add egg halves, simmer gently for 10 mins or so.
Carefully stir in rest of spices, fresh coriander and serve.

Make egg and vege muffins and freeze them for easy breakfast/lunch/dinner for your child (assuming nursery crisis means you have a young child).

Made banana pancakes, veggie packed fritters and omelettes. Still have a few to go but DS loved them all (15 months old!)

They won’t be good for another few days, they’ll be good for another few weeks. I don’t think I’ve ever looked at the date on eggs and I’ve never had a bad one.

I've just eaten scrambled eggs with ones dated from May. If they're off, you WILL know EnvyGrin
