Need some inspiration for the week ahead.

Tonight is chicken gyros that have been marinated in fat free Greek yogurt, harissa paste and a bunch of seasoning 🥰

What's everyone else having tonight & this week?

Tonight was pancakes first one with cheese, ham, egg and dessert one with white chocolate and fig.

We had something similar: marinated chicken on flatbread with tomato snd rocket salad and yoghurt dressing. From Hello Fresh - I wouldn't have done it if I had to measure everything up myself.
Tomorrow we are out (prize giving evening at school), then for the rest of the week I have: pork chops with apple sauce and baked potatoes and veg, chilli with rice, fish and chips with peas. That takes us up to Thursday- not sure what then - then on Friday next box of Hello Fresh which will take care of the weekend.

Sunday - a bit of a mezze. All shop bought for tonight: sweet potato falafels, morrocan houmous, carrot sticks, mixed leaves and breaded prawns

Monday - ginger and soy salmon, sweet potato wedges (with thyme, garlic granules, onion powder, sea salt and olive oil), runner beans and carrots

Tuesday - lemon, garlic and chilli king prawn linguine and garlic dough balls

Wednesday - homemade pizzas and rocket salad

Thursday - honey and soy tuna, potato wedges, sugar snap peas and roasted cherry tomatoes

Friday - Thai green chicken and green beans curry, rice and crackers

Saturday - Jamie Oliver’s carrot and grain salad with harissa and yoghurt marinaded chicken

I've only mea planned up until Thursday but we've got:

Monday - Cheesy BBQ chicken with chips and salad (this is a Gousto 'recipe' that I recreate as it's so nice!)

Tuesday - Beef Bolognese/Lentil bolognese

Wednesday- Meatball mash bake

Thursday - Italian chicken sausage pasta

I think I’ll do some haloumi kebabs, using a couple of baby courgettes from the garden, mushrooms and peppers. Rice and salad alongside plus chilli sauce and minty yoghurt.

Tonight is a roast chicken with veg. Leftover chicken will be sandwiches tomorrow, then I turn the carcass and the rest into Chinese chicken and sweetcorn soup (Only DH and myself, so 1 chicken goes a long way!)

I don't meal plan per se, but here are a few favourites I had in mind for this week.

Satay chicken. Marinade chicken thighs (whole or cut into stir fry strips) overnight in coconut milk, curry powder, garlic and ginger and soy sauce. Next day cook into a stir fry or just cook the meat and serve with veg and rice on the side. A simple satay sauce: crunchy peanut butter in a jar (say 4 tablespoons), add a splash of soy sauce, splash of sesame oil, 1 T sweet chilli sauce and shake. Add water to thin till its a thin enough to use as a dipping sauce or drizzle over the meal.

Fajitas made with chicken strips or beef mince

If its hot weather, I often just do a large salad

Roasted pumpkin, toasted pinenut, baby spinach, balsamic glaze and spring onions

Pear and blue cheese salad

Watermelon, green beans, toasted pinenuts and grilled halloumi

You're doing well by MN standards. Not only a never ending chicken but a massive salad in one week 😂

M - Steak with onions, mushrooms, mash and pepper sauce.
T- Mackrel with spinach,rocket and parmesan salad.
W- Chicken casserole cooked in the slow cooker.
T- Sea bass with green beans and baby potatoes
F- Chicken curry (slow cooker) with rice chips, prawn crackers and frozen chicken balls.
S- Homemade burgers with chips, salad.
S- Roast with all the trimmings..

We don’t meal plan but I can remember some of the meals we had last week!
aubergine parmigiana bake thing
chicken, bacon and avo salad
curry/rice/aloo gobi/breads/spicy yoghurt
steak and sautéed potatoes with broccoli
tuna steaks with samphire and salad and bread

Yesterday....roast pork dinner

Today....hoisin chicken wraps. Basically like duck pancakes but with chicken instead as duck is 💲💲💲

Haven't planned the rest of the week but we have gammon so might do gammon, jackets and corn on the cob or coleslaw.

Spaghetti carbonara with leftover gammon

Quite fancy fishcakes/wedges/peas one night.

I'm out for dinner with friends one night so DH is sorting the DC dinner yay!

Tonight is toad in hole with veggies

Monday: chicken korma with rice & naan.
Tuesday: one pan creamy Cajun chicken pasta
Wednesday: sweet chilli chicken stir fry
Thursday: homemade burgers
Friday: chilli & homemade nachos
saturday: left over chilli turned into enchiladas (or at least my version)
sunday: Roast (likely Gammon)

M: Sweet potato jackets with chicken, chorizo, bean casserole, peas
T: Roast BNSquash with feta and pasta
W: Quinoa poke bowl with grilled halloumi/roast aubergine etc
T: petit pois risotto
F: home made pizza
S: veg fajitas
S: Aubergine parmigiana

We mainly eat veggie and I spend a lot of time cooking!

Thursday - bbc good food chicken and mustard slow cooker dish with mash and veg
Friday - prawn stir fry
Saturday no idea but I won't be bloody cooking whatever it is Grin
