Need some inspiration for the week ahead.

Tonight is chicken gyros that have been marinated in fat free Greek yogurt, harissa paste and a bunch of seasoning 🥰

What's everyone else having tonight & this week?

Tonight is spicy pork and rice (BBC)
Monday - veg lasagne (have roasted all the veg this afternoon so it's not too much of a faff after work)
Tuesday - fish cakes
Wednesday-smoked mackerel, salad, new pots
Thursday - pasta of some kind

Not very ambitious but cooking at the end of a days work is a step too far sometimes!

Tonight is yellow-stickered rolled breast of lamb with Greek kleftiko seasoning.
Several "here's-1-I-prepared-earlier" to use up; ragu & bechamel from the freezer to make lasagne; full-meal chicken tagine with added cous-cous.
Battered cod from the freezer (UPF, slap my own wrist) plus peas & H/M chips for a CBA day.
Rest of the week is a mystery at the moment.

Tonight is a roast chicken with veg. Leftover chicken will be sandwiches tomorrow, then I turn the carcass and the rest into Chinese chicken and sweetcorn soup (Only DH and myself, so 1 chicken goes a long way!)

I don't meal plan per se, but here are a few favourites I had in mind for this week.

Satay chicken. Marinade chicken thighs (whole or cut into stir fry strips) overnight in coconut milk, curry powder, garlic and ginger and soy sauce. Next day cook into a stir fry or just cook the meat and serve with veg and rice on the side. A simple satay sauce: crunchy peanut butter in a jar (say 4 tablespoons), add a splash of soy sauce, splash of sesame oil, 1 T sweet chilli sauce and shake. Add water to thin till its a thin enough to use as a dipping sauce or drizzle over the meal.

Fajitas made with chicken strips or beef mince

If its hot weather, I often just do a large salad

Roasted pumpkin, toasted pinenut, baby spinach, balsamic glaze and spring onions

Pear and blue cheese salad

Watermelon, green beans, toasted pinenuts and grilled halloumi

Tonight is toad in hole with veggies

Monday: chicken korma with rice & naan.
Tuesday: one pan creamy Cajun chicken pasta
Wednesday: sweet chilli chicken stir fry
Thursday: homemade burgers
Friday: chilli & homemade nachos
saturday: left over chilli turned into enchiladas (or at least my version)
sunday: Roast (likely Gammon)

Tonight: Spicy rice with prawns.
Monday: veggie shepherds pie (mixed pulses filling with sweet potato topping)
Tuesday: Chicken and rosemary casserole.
Wednesday: Mixed seafood pasta bake.
Thursday: Toasted sandwiches (we are out at a school thing!)
Friday : Hot dogs on the bbq.

Tonight is vegan ‘beef’ pies with sweet potato mash, vege and gravy

Tomorrow is falafel and salad pittas with tsatziki. I might do some spiced roasted baby potatoes too.

Beyond that, no idea. Some sort of pasta dish and some sort of curry probably. I saw a recipe for a kidney bean dopiaza that sounded nice, if I can remember where I saw it.

Pilchards on toast. We were going out for a meal but when we got there the kitchen had closed half an hour earlier than advertised.

A few others I like.

Any white fish- cod, haddock, plaice etc in a dish that has shallow sides. In a bowl mix grated parmesan, zest of a lemon or lime, bread crumbs (I mix crumbies with panko breadcrumbs) and ground pepper and sprinkle over the fish. Bake until cooked and serve with steamed veg.

Paella tonight! Then tomorrow will be prawns with garlic/chilli sauce and noodles for dinner, and I'll be batch cooking a lamb curry, chicken and lentil stew, lasangna and meatballs in tomato sauce which should see us through the week and fill the freezer up. I'm also going to try to make my own pesto tomorrow (for the first time) so if that turns out OK, we'll probably have some of that at some point and save the other stuff for the freezer/days where we've both been at work.

Focaccia with cured meats and cheese today.

Tomorrow is butter chicken with pilau rice.

Later in the week we'll jacket potatoes with cheese/ beans/ tuna mayo. Creamy cajun chicken pasta. Not sure after that!

Gammon tonight with a potato dish I had in a restaurant recently and enjoyed so trying to recreate it - new potatoes, peas, fresh pesto and goats cheese salad.
Tomorrow ... probably cold gammon.
Tuesday .. made a batch of bolognese so perhaps a pasta bake.
Wed .. someone else can cook ... BBQ?
Thurs ... maybe homemade curry if I can be bothered
Fri ... I'm out for the evening... DH & DS can sort themselves out .. both perfectly capable cooks.

Veggie loaded pizza using pizza base from freezer and fake tzatziki with lots of grated cucumber so that my LO eats some veggies.
Odd combination but had overnight guests and feeling under the weather!

pizza Wednesday because I’m trying to save money by running down my emergency freezer stash.
pearl barley risotto on Thursday (another money saving one!)
chicken and coleslaw pittas on Friday- another busy night
moroccan chicken salad on Saturday when it’s finally salad weather again!

Did a load of shopping yesterday and put the (gas) bbq on tonight but cooked a lot of extra: half jerk chicken, 2 x big chorizo sausages, whole chargrilled butternut squash and three whole roasted beetroot. Some I’ll use straight off, some I’ll freeze for later use, some I may scoff as part of my lunch… This set of meals may sound complicated but it’s a lot of the same ingredients. Just two of us so a lot of what we grilled tonight will last most of the week with additions.

This week in no particular order aside from whether things look like they’re going off:

Feta, Nectarine and roasted beetroot salad using the beetroot tops in with the leaves and a balsamic dressing.

Butternut, Broccoli, Chorizo and Feta puff pastry tart with salad.

Jerk chicken wraps with nectarine salsa and rice.

Chorizo, squash, pepper and chickpea stew with wraps and salad.

Pasta “surprise” - probably leftover bacon/pancetta, broccoli, whatever is left of the tomatoes from the weeks salad makings. Load of garlic and some chilli flakes.

I’m loving this thread. It’s giving me some great ideas (currently craving Texas style bbq if anyone has any great recipes - collard greens are high on the list).
