Is it mayonnaise you don't like or egg based mayonnaise? I use Hellman's vegan mayonnaise because I hate eggs. If it's any mayonnaise, substitute the mayonnaise for a Greek yogurt like Total Yoghurt.

Potatoes and a salad dressing. Just don't add mustard to the dressing and use whatever herbs or herbs you like.

Substitute mustard for tahini in any dressing recipe. It will have the same kind of emulsifying effect.

Use pesto (add more oil if it’s too thick or strong) as the dressing.

I often just do vinaigrette with a mixture of chopped herbs and chives or spring onions

I just use a vinaigrette and fresh herbs like chives and parsley. You can add onions and pickled cucumbers for more taste.

Make sure you toss the still warm potatoes in it! Lovely & simple.

Boiled new potatoes, parsley, crumbled stilton on while warm, walnuts, olive oil, salt and pepper. Perfect combination.

I made a vegan one with a dressing made from crushed cashews that I found on the internet.

The mustard acts as an emulsifier. Maybe one with tahini in will do the same thing?

tahini, honey, avocado, miso paste and maple syrup can all act as emulsifiers too.
