I use salad cream with finely chopped onions and chives.

Onion & garlic or sour cream & chive dip stirred into chopped potatoes. Add some chopped green herbs of your choice if you fancy.

Wow, just wow. Thank you all so much!

I love all these ideas, thank you! On these hot days it’s lovely to make dome some side salads that last a few days.

My standard potato salad is this:
-boiled potatoes
-creme feche (I used to use sour cream, this just tastes better!)
-olive oil
-green herbs (I like chives, parsley and dill)
-garlic salt and pepper

I mix everything together and then add the boiled potatoes

Quick and easy.

I made a coleslaw yesterday with thick yoghurt, tahini, lemon juice and seasoning. You could try that mix. It was good.

I don't like potato salad heavy on mayonnaise. So when I make it i tend to put a little in (you could leave it out entirely) and then use salad cream.
I adore salad cream though.

I use the same recipie still. So cornichons, capers etc But salad cream instead.
Think I may make some for tonight now.

Never mustard either as DP and one of my DC can't stand it.

EV Olive Oil and salt and pepper for me, flat leaved parsley if you have it. Serve still slightly warm.

Garlic olive oil and rocket with sea salt.

Thank you @myrtleWilson ! I made it last night and it was a big hit. The sautéed onions add a slight sweetness which was morish with the vinegar tang.
