Hi all,

This is my third 'Roasting Tin' book and I absolutely love them! The only problem is Rukmini and I have a difference of opinion on carbs as every now and again she leaves them out Grin What are we thinking? Green salad? Coriander rice? Any opinions gratefully received.

(Ingredients are: Corn on the cob, red onions, chickpeas, garlic, olive oil, cumin, coriander, paprika, chilli, salt and for the dressing fresh coriander, yoghurt, lemon juice, salt).

I’d bung wedges of sweet potato in the tin I think.

Or make up a packet of cous cous.

Ooh ok I'll add it to the maybe list Wink if you've got any tips I'd love them, I'm making it tomorrow night- most of the recipes are perfect but every now and again they need tweaking!

I have made that and served it with chicken. Which I know isn't really what you asked! But I do find that some of the dishes are better side dishes than main dishes.

@mynameiscalypso haha I like your thinking! Meat makes everything good Grin I have found that in (rather ironically) the 'Feed A Crowd' chapter there's often an element missing!

I would probably crumble feta over and make a dip with yoghurt and serve with salad and flatbreads

@LuckOfTheDrawer My favourite is 'The Roasting Tin Around The World' as there are recipes I haven't seen in other books/online and would never have tried otherwise. I definitely recommend if you have an adventurous palate and you want to try something new Smile

@AromanticSpices Gosh most are thinking flatbreads and yet I'm still to be convinced Blush Good idea though I will double the yogurty sauce!

Yeah not pitta, somethimg middle eastern with herbs and spices in.

I would go with either meat, chicken or fish. If your wanting it to be vegetarian than I would go with flatbread, feta, yogurt dip etc

Forgot to add sweetcorn is already quite high in carbs so I'd avoid another carby veg

@Greenfree I like the idea of switching it around so the corn becomes the side! But are you in cahoots with Rukmini?! Sweetcorn high in carbs?! I am a lady big of bosom and need as many carbs as possible Grin

Lol, in that baked potato's and some Cajun chicken. I think it works better as a side dish ☺️

Thank you 🙂! I've actually had a look at a few of the books, and they all looked really good. So I'm stuck in a pit of indecision 😄.

Think I'd go with a nice flatbread/naan (if you are near a decent shop for those) or pitta, good for scooping! looks delicious
