Salad suggestions

Trying to keep summer meals simple - fish/chicken/halloumi etc with salad, but getting bored of same old salads (lettuce, tomato, cucumber, peppers, sunflower seeds, pineapple). Anyone have any good suggestions for something quick and fairly hassle free. Bonus points for dressing recipes too!

What about couscous, you can get flavoured bags of it, and also add your own ingredients. Do different combinations of flavours to suit whatever you are having with it such as chopped tomatoes & olives with chicken, preserved lemons & parsley with fish, fruity apricot & dates with halloumi etc etc.
Use a vinaigrette dressing to finish.

Carrot and cabbage and onion

Your basic salad - leave out pineapple and add sone gerkins with a splash of the vinegar and some olive oil

Or a garlic and mustard dressing

Swap some of your standard veg for Sweetcorn , mushrooms , fresh peas or chopped mange touts

Use spicy green watercress instead of lettuce

Any other fresh herbs - we use coriander a lot , chives

Greek salad - red onion, tomato, cos lettuce, cucumber, feta, black olives, dried mint. Dressing of olive oil, lemon and dried mint.

I always deseed and salt the cucumber and tomato.

Erm.. lettuce, tomato, cucumber, peppers, sunflower seeds, pineapple I have a stomach ache just reading this.

  • Avocado, rocket, kalamata olives, feta, lime dressing, sesame seeds
  • Toasted chickpeas, shaved parmesan, tuna, dark leaves, olive oil
  • Italian chopped salad (iceberg, cherry toms, sundried toms, olives, salami, parmesan, crispy onions)
  • Roasted pepper, basil, burrata

Waldorf: an apple, couple of sticks of celery, 125g on walnuts (toasted - really brings out the flavour), 100g red grapes, lettuce. Dressing mayo, natural yogurt and lemon juice.

Buy a ton of jarred veg to add in, they're my go to at the moment, favourites are:
Roasted red peppers
Caper berries
Artichokes
Olives
Jalapeños
Sweet drop peppers
Sweetcorn (tin)
Mini pickles.

Making it much more interesting!

I made this salad dressing - basically peanut butter, lime, soy sauce, maple syrup and vinegar (I used white wine as didn’t have rice vinegar). And had it with chicken, red cabbage, carrot, sugar snaps, red pepper and coriander (left out noodles - but they’d be nice too)

French beans: make a vinegrette, add finly chopped onions, parsley & chives.

Toss the (still warm beans) in the dressing and leave a few hours to cool in the fridge.

Cucumber Salad: make a dressing from sour cream, dill (fresh is best) some olive oil, vinegar and plenty of salt.

Peel Cucumber and cut into chucks ... again leave a few hours in the fridge.

Another vote for Waldorf salad, to use up store cupboard stock, swap the grapes for raisins or sultanas, plump them up by soaking in a little apple or orange juice for a couple of hours. Waldorf salad and smoked mackerel fillets are a match made in heaven!

I always do a basic base, so lettuce, tomato, cucumber usually. Then currently I'm obsessed with red onion, sometimes some feta, olives, chopped pepper, grated carrot, avocado, pumpkin seeds. I make a huge bowl of it and then we eat it over a couple of meals (I don't add dressing to salad so it doesn't go manky or limp!)

Also second Waldorf salad, so crunchy.

French carrot salad (carottes râpées) is a good stand by, cheap, quick, colourful and keeps for a couple of days in the fridge. Peel and grate (medium) some carrots, stir in vinaigrette, chopped herbs or a little mustard or cumin. Leave to stand for a few hours before serving so the carrots release juice.
