Salad suggestions

Trying to keep summer meals simple - fish/chicken/halloumi etc with salad, but getting bored of same old salads (lettuce, tomato, cucumber, peppers, sunflower seeds, pineapple). Anyone have any good suggestions for something quick and fairly hassle free. Bonus points for dressing recipes too!

Finely slice courgette into long strips (use a mandolin or a peeler) season with pepper and dress with lemon juice, extra virgin olive oil, mint (fresh, dried, sauce - what’re you have in, and finely sliced or grated garlic. It’s nice with a finely chopped chilli if you like heat and I sometimes crumple a little feta in too.

Slaw - cabbage, red onion and carrot is my standard. I sometimes add fennel, or any root veg that catches my eye. Season and dress with apple cider vinegar and extra virgin olive oil.

Cowboy caviar - tin of black beans (or your preferred bean), tin of sweetcorn (or fresh if you have it), diced onion, pepper and tomato, jalapeño if you like heat, chopped coriander if you like it. Dress in oil and vinegar. You can have it as is, or add a chopped head of little gem or romaine lettuce.
