Favourite vegetarian pizza toppings?

After umming and aaahing I bought a pizza oven in the Ooni sale. We do pizza once every week or two but I always do the same toppings, griddled courgettes or asparagus and goats cheese. We'll be making more pizzas this summer because we can cook outside so please give me some inspiration.

Walnuts, blue cheese and rocket- it's amazing.

I'm going through a phase of adding sliced gherkins to pizza. Nice and piquant.

1. Red onions, olives, artichokes, red chillis

1. Sun dried tomatoes and basil

1. Olive oil, garlic and parsley (basically a huge garlic bread)

Capers, olives and mozzarella

Mushrooms
Peppers
Rocket
Basil
Chillis

Is my favourite vege pizza

Olives and pineapple

Red onions, capers and kalamata olives.
Brie and a sprinkling of liquid smoke.
Thinly sliced potato and pesto with pine nuts.
As many cheeses as you can cram on, drizzled with hot sauce!

I always look on pizza restaurant menus for inspiration- pizza express is a good start. I love the Padana- spinach, goats cheese and caramelised onions with extra black pepper.

Oh I should have mentioned that I don't eat mushrooms or olives 🙈

Caramelised onions and goats cheese

Good point! I'm not a fan of pizza express but I went to Zizzi's not so long ago and struggled to choose

Roasted Aubergines, garlic and chilli oil.

White base with thinly sliced pear, Gorgonzola, walnuts and honey drizzled over after it’s out
Tomato base quorn pepperoni, jalapeños, red onion and peppers
Sacla aubergine pesto base, goat cheese, chunks of small tomatoes and rosemary
Tomato base, roasted peppers, capers, fresh mozzarella

Spinach and ricotta

Quattro Formaggi with vegetarian cheeses

Pineapple. It doesn't matter what else is on there, chuck on some pineapple.

Jalapeño, spinach, onion. Really nice with a white sauce. I also love mushroom and olive but I see those are out. I quite like vegetarian sausage or the OUMPH doner on pizza too and vegetarian pepperoni isn't bad if you aren't opposed to meat substitutes.

My favourite combo is sliced flat mushrooms cooked in garlic butter, red peppers, jalapeños & olives. 😋

This is favourite in our house, but without courgette. We prefer mushrooms sliced. Topped with grated cheddar and mozarella.

Goats cheese also good.

We usually have:

Roasted aubergine, courgette and peppers with capers.

Feta cheese, onion, cherry tomatoes and halved olives mixed with pesto.

Florentine - Egg and spinach

There's a local restaurant that does sliced, fried aubergine on a pizza. It's wonderful, and I have never managed to recreate it at home.

I'd welcome ideas for non-tomato based pizza sauce. I usually just use red pepper pesto.

I much prefer BBQ sauce to tomato. A local pizza place uses hummus- I didn't think I'd be keen but it's lovely! I had a "curry pizza" once and it worked, but I imagine it's an acquired taste.. I've seen restaurants do a bechamel base too but not got round to trying that yet.
My favourites have already been mentioned but pizzas always have to have jalapenos and pineapple on! Brie is a fairly recent revelation, and I can't wait to try gherkins.
