Favourite Vol-au-vent filling recipe?

PumpkinSly · 01/05/2023 17:03

I flipping love a Vol-au-vent, and I want to make some for the coronation. Does anyone have an absolute favourite filling recipe to try? My grandma used to make a delicious creamy mushroomy filling I remember from my childhood in the 80s/early90s. I'd love a retro filling recipe if anyone has one to share? I don't think I've eaten a Vol-au-vent since my childhood so I might be mythologising how good they were, but I'm still going to make them. Thanks in advance

This is the best thread ever. Thanks all for sharing. I too loved those vol-a-vents and have always wanted to make them properly like in the 70’s!

They sell the frozen cases in the food warehouse,I asked 2 young members of staff where they were and just looked at me blankly lol, needed an older person to locate them,I love salmon in mine.

Finely diced pear and celery with dolcelatte and walnuts.

You HAVE to use condensed soup otherwise they don’t taste right.

Fry mushrooms until they’ve released all their water and it’s evaporated, stir into a tin of condensed soup, thin it down slightly with milk if you like. And that’s it! Bit of fresh parsley if you’re feeling fancy.

@DisforDarkChocolate m and s used to do a creamy mushroom slice 2 pack back in the 90’s when nice vegetarian food was hard to get, they were blissful. Also a creamy vegetable one, I used to have for my Sunday dinner with all the veg. Sadly discontinued I’m sure the chicken in a tin is too probably.
I want to demolish a pile of vol au vents now 🐷

IHeartGeneHunt · 01/05/2023 18:15

I love vol au vents!
My dad used to put prawn cocktail in them or tuna mayonnaise. I like mushroom, I just make mushroom Stroganoff and put that in when it's cold.

Honeyboomboom · 01/05/2023 18:18

Lardons, onions, garlic, sliced mushrooms as a tin of Campbells cream of mushroom soup… delish.

thefamous5 · 01/05/2023 18:23

My mom used to always make egg mayo ones

FirstThenSecondThenThird · 01/05/2023 18:47

Used to love them as kid. Any recipes / mixtures without mushroom?

I have some good recipes. But first I need you to promise that you will use them only for good and not for Coronational purposes. <hard stare>

I swear 😅

You can buy frozen cases (jus rol) they cook really easily and then you have to cut the tops out when they’re cool
you need to do a bit of turning round during cooking

i love vol au vents 🐷

Thank you!

This thread reminds me of a festival I was at last year were there was a food truck selling giant, gourmet vol au vents with all sorts of fancy fillings. I think the vol au vent to due a resurrection.

TwoMonthsOff · 01/05/2023 19:17

@AtleastitsnotMonday can’t beat a classic ! Food truck are onto something there

TwoMonthsOff · 01/05/2023 19:19

@RemusLupinsBiggestGroupie they had slim carrot batons in them I loved them so much, beautiful pastry and the mushroom ones were absolutely divine . Why do they stop making them ?

cptartapp · 01/05/2023 19:19

I love them until tight as arse PIL made mushroom vol au vents at Xmas using mushroom cup a soup instead of condensed soup.
Revolting.

The M&S thing I mourn more than any other was a 2 pack of leek and cheese tartlets. They were delicious. They also used to do a 2 pack of little filo pastry things with spiced chickpeas inside.

WhyDoesItAlways · 01/05/2023 19:49

Oh prawn cocktail was my favourite filling. I also liked the mushroom ones and if my grandma was still alive I would ask her for the recipe because she made a banging shroom vol au vent! I think she even made the pastry bit herself using round cookie cutters with a bit of a frilly edge. Pretty sure I remember her doing the pastry from scratch too. I should have spent the time to learn all this stuff from her. She'd be pleased as punch to know that vol au vents were making a come back!

PumpkinSly · 01/05/2023 20:31

Wow, thank you all so much for your recipes, and the shared love of vol-au-vents! I will definitely be trying some of these recipes.

They will be for Saturday for the coronation but please don't hold that against us all and share your recipes@CurlewKate.

We are having chicken and mushroom vol au vents for dinner tonight! I make a chicken a la king basically. Chicken, onions, chopped red pepper, mushrooms with a bit of wine, chicken stock and cream at the end.

AtChoService · 01/05/2023 20:47

Best ones I ever made, had ackee and saltfish in. I can't remember why I decided to use that as a filling, I think I had some leftover and they were FUCKING AMAZING.

Needapadlockonmyfridge · 01/05/2023 20:52

Ooooh yessss.
Chicken in white sauce, or mushroom in elite sauce.
Heaven.

I might make some Coronation Chicken ones for Saturday 😃

Needapadlockonmyfridge · 01/05/2023 20:52

Ffs.... *white sauce.

(Though I like the sound of elite sauce)....

lemonyellows · 01/05/2023 20:56

My grandmother used to make sweet ones with jam and cream. Big highlight of trips to her house as kids. Omg I want these now
