Favourite Vol-au-vent filling recipe?

I flipping love a Vol-au-vent, and I want to make some for the coronation. Does anyone have an absolute favourite filling recipe to try? My grandma used to make a delicious creamy mushroomy filling I remember from my childhood in the 80s/early90s. I'd love a retro filling recipe if anyone has one to share? I don't think I've eaten a Vol-au-vent since my childhood so I might be mythologising how good they were, but I'm still going to make them. Thanks in advance

@DisforDarkChocolate m and s used to do a creamy mushroom slice 2 pack back in the 90’s when nice vegetarian food was hard to get, they were blissful. Also a creamy vegetable one, I used to have for my Sunday dinner with all the veg. Sadly discontinued I’m sure the chicken in a tin is too probably.
I want to demolish a pile of vol au vents now 🐷

M&S still do the chicken in a tin.

I love vol au vents, I don't know why they've gone out of fashion. Prawn cocktail, egg mayonnaise and creamy mushroom are my favourites. Along with cheese and a cocktail onion/pineapple on a sticks and mini sausages.

Hello again, my little vol au vent friends.

Well I've been out hunting for vol au vent cases with the long-suffering OH, bless him. We tried Iceland, and Asda (chiller cabinet and frozen) and no dice. I ended up buying a ready-made sheet of puff pastry and a carpet for the back bedroom.

Asda was full of children whose schools were shut, and their long-suffering parents and grandparents, trying to do a food shop. It was very busy. When we neared home, we saw that our road had been closed for roadworks and our near-neighbour's car was about to be towed away. We gave her the heads-up just in time and saved her the £200 fee, and did she say thank you? Did she f*ck.

So she's not getting a homemade vol au vent.

Oh lord, I'm going to have to get the box of 'store bought' (thank you, Ina) puffy pastry out of the fridge then, and do things to it with circular objects.

My grandma used to use circular cookie cutters. One large one for the base and then a large one with a smaller inside to create the ring for the walls. She had ones with a sort of serrated/frilly edge. I used to love helping her do it. Think she used a bit of milk/water to stack them together.

I made some vol-u-vents for friends coming round to watch the Eurovision Song Contest. I managed to find the frozen cases in a Tesco super store.

That's how I make them!

I also do big rectangular ones for a main meal. I just cut those freehand.
