Roast chicken leftover ideas?

I love roast chicken, it's one of my favourite things, but as it's just me and DP at home I never know what to do with leftovers that's delicious (but also potentially straightforward and low maintenance?) Also if anyone has any top notch roast chicken recipes please do share - I usually just do butter or olive oil over the chicken with some in the cavity, half a lemon in the cavity, and some salt and pepper all over, and sometimes some thyme added in the due, then I add some lemon to the juices before it's finished cooking, which I then heat on the hob for gravy.

Please give me your most delicious roast chicken recipes/techniques, and also how potatoes/rice/vegetables can easily be done alongside!

I don't do anything too unusual with roast chicken, the usual, sandwiches/wraps, curry, Aisan style
noodles

I make a thing the kids call dinner cakes, shredded left over chicken, mashed carrots and potatoes,, And make a sort of fish cake type affair out of it. Mix it all up into a dough with flour and and egg, sometimes coated in breadcrumbs and baked.
I add onions herbs etc or it can be a bit bland.

Get Nando’s peri sauce all over the chicken, spatchcock it and bbq it. Serve with a homemade slaw, and flat breads. Perfect summer roast.

My favourite way to use it is in a baked risotto. Soften onion in oil, add chorizo or bacon, add rice, herbs or turmeric or paprika, then other veg, chicken, tomato purée, stock then bake in oven for 30 mins.

Or make coronation chicken and have with salad or baked potato.

Our favourites are to to roast on fennel with lots of lemon and garlic, serve with cous cous or potato salad for summer. Leftover roast chicken goes shredded into risottos, or bechamel sauce, maybe with ham or white wine, and put a pastry lid on for quick pie.

Paella!! If you can be arsed you can make stock from carcass and use that for the paella.

For recipes, if it's a really top-notch chicken I don't do that much. Goose fat rather than olive oil, salt, pepper.
If you want it really crispy there's a couple of tricks

  • the day before, submerge chicken in a pot of boiling water for just about one minute. Pat dry and leave to sit uncovered in fridge overnight.
  • if you want to go totally overboard use a hair dryer on it before it goes in the oven.
I'm lucky enough to have access to French black-feathered chicken so never do anything else. Don't tend to have a lot of leftovers but always freeze the carcass, then use for soup or stock with the addition of extra chicken necks/feet or a stewing hen if I can get one. Amazingly the latter are much better for soup meat than using leftover roast chicken!

Thanks @GrumpyPanda - do you truss or baste your chicken? I've seen this suggested as a top tip for the best roast chicken, it seems a bit faffy for me, but I'd do it if it significantly improved the flavour!

Shuffle they teeny left over bits about in some 5 spice, stir fry with spring onions, noodles and bean sprouts.

If there’s enough I make Waldorf salad (chopped chicken, apple, grapes, celery, walnuts and a dressing of half mayo half yoghurt). Kids love it.

Otherwise I just have it cold in a sandwich with mayo.

And I add the carcass to my somewhat creepy bone bag in the freezer which gets made into stock once full.

I will use leftover meat in a simple pie; fry up leeks in butter, add a bit of flour to make a roux then add wine/milk/cream/Dijon mustard. Could add other veg and bacon; whatever you like. Then add chicken at the end and put filling in a pie dish. Lay pre-made puff pastry over the top (you will need to make some decorations with the off cuts), egg wash and bake until the crust is golden.

Or chicken broth which is good for aging skin 😂. Fry chicken bones/sinew/skin/any shite you don't want to eat in a saucepan with oil, onion, carrot, celery, garlic. Get them nice and brown then add water, dried herbs, bay leaves, pepper and a lot of salt. Boil for at least an hour to make the stock. Strain into a bowl then pick off & pop into the stock any meat from the carcass that's edible. Chuck the veg and carcass.

To make the soup, finely dice onion, garlic, carrot, celery and fry, then add stock with more herbs and chopped up leftover chicken meat and heat for a little while.

  1. Roast chicken is literally the best ever.
  2. Don't serve it with anything so you can eat all of the delicious roast chicken!
  3. If you must have left overs, break into small pieces. Make a white sauce roux and add mustard and a knorr stock pot. Stir in chicken plus some peas. Add to dish and put a puff pastry lid on!

Strip the carcass and shred the meat and skin.

Tacos - fry onions, peppers, garlic and chicken with taco seasoning (basically cumin, paprika, chipotle etc but just buy a jar of dry spice). Serve in taco shells or a burrito wrap with corn, salsa, shredded cabbage, avocado, cheese, black beans etc

Chicken salad - mayo, mustard, s&p, celery for crunch, Tabasco for a kick

Pie - sweat some leeks and fennel, add garlic, s&p, flour and milk, add chicken, put in dish and cover with puff pastry, egg wash, bake. Serve with steamed broccoli etc

Crispbread - pile high, avocado slices, pickled jalapeño, loosened mayo/white sauce of choice, s&p

Stir fry - scramble eggs. Remove and fry garlic and ginger, add whatever veggies, add chicken, add rice, add eggs, soy sauce

chicken fettuccine-
recipe-cook pasta,
brown an onion, slice mushrooms and add,
add sliced leftover chicken,
sprinkle with lemon pepper
1/2-1 cup white wine
chicken stock cube
cook for about 5 minutes
add cream, heat through and serve on pasta,
mine like garlic bread and salad on the side.

There's just 2 of us as well, so I serve the legs plus skin, & stuffing if I've made any. And half of the gravy
I remove the breasts & freeze in gravy for another Sunday.

I like cold cooked chicken, but I'm not keen on it replacing fresh in curries etc.

Nibble any remaining meat (in private) before using the carcase for stock.

Sweet and sour chicken with rice/prawn crackers
Coronation chicken with rice and salad
Chicken/mushroom casserole with bread
Sandwiches
I freeze any bit of it to use at a future date as above.
