Roast chicken leftover ideas?

I love roast chicken, it's one of my favourite things, but as it's just me and DP at home I never know what to do with leftovers that's delicious (but also potentially straightforward and low maintenance?) Also if anyone has any top notch roast chicken recipes please do share - I usually just do butter or olive oil over the chicken with some in the cavity, half a lemon in the cavity, and some salt and pepper all over, and sometimes some thyme added in the due, then I add some lemon to the juices before it's finished cooking, which I then heat on the hob for gravy.

Please give me your most delicious roast chicken recipes/techniques, and also how potatoes/rice/vegetables can easily be done alongside!

I meant to say that in the Mexican lasagne, I add whatever I have and dont follow that recipe to the letter. Kidney beans, frozen corn, shredded chicken, tinned tomatoes, onions, peppers and a taco mix is mainly all I used. Maybe japalenos or chilli if you like a kick.

The other day I found 'spice bag' mix in tesco. I made some chips, fried garlic/red onion/a pepper, fecked in the spice bag mix and gave it a mix then fecked in the leftover chopped chicken and the chips last. Was really nice.

Usually do either chicken noodle soup or chicken chow mein with leftovers.

Ooohhh, so many good ideas here!

It is just DH and me at the moment, too. DH is making a version of Tom Kerridge’s Chicken and Pearl Barley Soup with the leftovers from our Sunday roast.

TK has you use a whole, raw chicken, so DH adjusts proportionately to the weight of our leftovers. As the chicken is already cooked, he uses all (homemade) stock, no water, for more flavour. We leave out the courgettes because although we generally love them, DH thinks they sound odd here. The result is delicious and even better after it sits.

I do the usual with leftovers (stir fry, risotto etc) but I also freeze it in batches so so can throw it in things at a later date.

I've been known to roast a whole chicken just so that I can have hot chicken and stuffing on a big soft white bread roll so I'd make chicken and stuffing sandwiches with the leftovers.

Make the best roast chicken sandwiches ever. Toasted sourdough, chicken, dip in gravy. That’s it.

When roasting a chicken I always grate lemon zest onto it along with garlic cloves and a great side dish is roasted cubed sweet potato with red peppers.

theres 2 of us and we have a roast chicken most weeks! I make a pie with a puff pastry top (with leeks, mushrooms and crème fraiche sauce), or risotto, or fajitas/tacos.

I use it to make a curry, pie or casserole. Quite often I'll strip the carcass and freeze the meat to use whenever I needed shredded chicken so there's no waste.

We usually make a soup. All the chicken and veg from the roast with pearl barley and herbs (usually thyme or bouquet garni - depending on what’s in the cupboard) with home made focaccia (made in advance)
