What would you do with 8 punnets of cherry tomato's?

Did some cooking with my class at school today and massively overestimated the amount of tomato's we'd need.

I'm now left with 8 punnets of tomatoes, 2 are currently sun-drying but what would you do with the other 8?

I don't want to make soup and me and dp are trying to loose weight so looking for low cal ideas.

Just cook them down with some onion and garlic and freeze for a pasta sauce base in future

We grow them in summer and end up with LOADS come September. I roast them with olive oil and seasoning, then freeze them in 400ml batches and use instead of tinned toms

Sorry I should have said I have a lot of pasta sauce in the freezer so don't really need anymore. 2 punnets are in the oven drying out. The rice dish sounds lovely though, I never think to add cream to rice.

We like baked orzo and cherry tomatoes as a simple dinner. 200g orzo, 500g cherry tomatoes, red onion and enough stock to cover it. Oven for about 30mins. From the Green Roasting Tin if you want the whole recipe.

Just freeze them in sizes you would use and pull them out as required to add to italian style (or other) sauces. I just do this with the excess garden toms, still got a couple of bags left from last year.

Tomato and mozzarella and pesto salad. Obviously not calorie free but very delicious. Optional prosciutto as well.

Use them to make bruschetta? Raw garlic, diced tomatoes, balsamic vinegar. Put on toast and top with goats cheese.

I really want to learn how to make caramelised tomatoes, I had some on the top salad in Spain and they were delicious.

I've had a really yummy tomato and fish stew before, with potatoes and olives. I'm not sure of the exact recipe but I think it would have had onion and garlic as well.

I also like a sauce (for pasta or fish etc) with fried halved cherry tomatoes and capers and balsamic. I think it's a Jamie Oliver one.

And finally, definitely not low calorie, but I've had a fabulous Diana Henry tomato and olive and goats cheese clafoutis. Utterly delicious.
