Wild Garlic

Am getting my 2023 first dollop of wild garlic in my veg box this week and am keen to hear from others how you use it - the last couple of years I've ended up using it as pesto (natch), in a chicken pie and in a risotto. Have googled other recipes but personal recommendation is always better - how are you using yours?

Every year I make nettle soup with a bit of wild garlic blended in, served with wild garlic and cheddar scones.

I also use it in everything I can that might call for garlic/onions, like sautéed or roasted veg, pasta sauces, stir fry, etc.

It's lovely, but I find the central vein bit a little tough, so rip the leave off on either side.

I have loads in my garden and every spring my 'go to' lunch is wild garlic pesto/tapenade on a bit of toast with scrambled eggs. The pesto is a big bunch of wild garlic, chopped and in the food processor with walnuts, Parmesan, olive oil, black pepper and lemon juice. I make a large jar full a week until Mid-may and coupled with a healthy breakfast makes me feel so healthy. Hope to lose a few pounds by summer without really trying.

In past years I've made wild garlic salt (ok, but flavour fades quickly) & wild garlic butter - put it in the freezer & lasts ages.
I want to try making wild garlic hummus.

does anyone know if it is available in any supermarkets? I live in a city so no ability to grow it and also no abundance of local farmers markets.

@SummaLuvin I am sure I got a bag last year in my Riverford veg box so maybe you can order from them. Or at a farmer's market maybe?

I like to whizz wild garlic up with some cream cheese, salt and pepper and a bit of lemon, and eat it for lunch with bread, ham, salad and some fruit.

Sorry you said no abundance of farmers markets! But try Riverford or maybe Natoora.

Whizz it up and freeze it in an ice cube tray with a but of water, them just use it as a substitute for regular garlic cloves as needed.
If you have IBS garlic cloves can be a trigger but wild garlic is much gentler on the digestive system.

Have you got any countryside at all nearby? It grows everywhere!

There's a housing estate near me with a footpath running behind the houses and there's loads up there. Unless you're smack in the centre of London I'd think you could find some.

The dehydrator it is perfect for wild garlic.
The stuff I dried last year is still very good.

You could try garlic leaf fritters, use a tempura batter made with sparkling water (as you would for elderflower fritters). Serve as a garnish with lamb chops or chicken.
Or make more robust fritters with ricotta, or courgette, or puy lentils as a light meal.

Forgot to say I made wild garlic Kievs last year. I also substitute wherever I would normally use a garlic clove

I live near ancient woodland & we don't have wild garlic anywhere! I do have rampant 3 cornered leek in my garden though.

We're blessed in our boggy back garden. It's such a welcome treasure. We make soup with wild nettle tops. Pesto. A lovely wild garlic sauce that keeps ages in the fridge. It gets thrown into frittatas, blended with cream cheese, the buds get pickled like pungent little capers.

We make loads of wild garlic butter and freeze in single portions. It's divine melted onto a flat bread or pita and grilled. You'll be so happy to have that zingy savoury hit next winter when there's no garden herbs.

thank you, it is available on Riverford, now I need to make a little box to get up to £15 - I'm think jalapeños, fresh turmeric, Jerusalem artichokes...

Thank you everyone! @SummaLuvin i got mine via Riverford. I have been ordering a veg box every week as it encourages me to be more vegetable focused in cooking - we have an excellent grocers near us and am thinking of moving to that - but I do like the fact the veg boxes can throw in a curve ball to make me be a bit more adventurous (although I think that is happening to lesser degree now...)
