Am getting my 2023 first dollop of wild garlic in my veg box this week and am keen to hear from others how you use it - the last couple of years I've ended up using it as pesto (natch), in a chicken pie and in a risotto. Have googled other recipes but personal recommendation is always better - how are you using yours?

I too make wild garlic butter- i use my baby purée silicon tray thing so it’s given it a new lease of life and purpose!

i started already today with the smallest leaves only just starting in our garden - I much prefer them young as by the time they flower they aren’t quite as addictive!

i love discovering the garlic butter long after wild garlic season and it really cheers up boring veg.

I’ve frozen my pots of wild garlic pesto, and it keeps its taste and colour too. I do pour a thin layer of oil over the top of the pesto before I freeze.

I LOVE wild garlic!!!

You've got some solid suggestions here!

I personally like using it in risotto by making a paste from it in the blender after blanching and refreshing it in ice water.

You could also use it to make a dressing with truffle oil 🤤 or wild garlic mayo.

Wild garlic is also great with white fish in my opinion. Make a herb crust by dehydrating the wild garlic then blending it and mixing it with some stale bread. add a little butter just till the crumb slightly comes together and use on the top of the fish (you will want to oven cook it once it's on the fish).

I picked a load while walking back from the shop yesterday, the smell of it in the woods is amazing.

I always use it chopped up in pretty much every salad for a few months, my family love it! I also chop it finely as a garnish on most dishes I serve 😁

Use it for anything that would usually take chives or spring onions, anything that'd take garlic or onions too of course. So many savoury bakes. I looooove wild garlic season! My fave is making a rough pesto with mushrooms, soft cheese, pine nuts and stacking that onto buckwheat pancakes.

So many recipes for this.. I l=ove Wild Garlic, Garlic Butter, Wild Garlic Salt, Kiev and a favourite of mine, Wlid Garlic Capers. I just got a whole load more from Riverford even though we have carpets of the stuff in our garden .
yesterday I discovered it makes a lovely sandwich : tiger loaf baguette, thick layer of Lurpak and a thick layer of fresh wild garlic . I had to make a second one.
