What to cook with green peppers in?

I bought some green peppers to put in a jalfrezi but every recipe I came across has red peppers in so I used red instead. What can I do with the green ones? I would put them in a chilli but I don’t fancy that. TIA.

Simple prawn curry - roast a few veg and spices/ginger, throw in coconut milk and raw prawns. I don't eat many green peppers but they are nice in this.

I fry them up with bacon, onions, garlic and mushrooms. Sometimes I add tinned tomatoes. Serve with rice or jacket potatoes. Not the most exciting of dinners but does the job and it's quick. Frying them seems to reduce the bitter taste. I'd rather buy a red pepper individually though than those packs of three but it does cost more.

Any colour pepper can be used in almost all recipes- don’t have to stick to the colour specified!

Curries, tomato based pasta dishes, chilli, stuffed peppers, fajitas, stir fry, fried rice…

Green peppers are the work of the devil, but if you must use them up, Honey Chilli Chicken is a good option.

We pulse them into match head size and throw them in with bolognese, curry or cottage pie, just to add a bit of extra veg.

Stuff them with a mince/rice/cheese/egg combination and bake, or use them to make pepper stew (with sausages, tomatoes, onion, potatoes and basil). Both Ukranian style! Delicious.
You could also make vegetarian stuffed peppers if you don't want to use mince.

I usually do jambalaya, they are part of the holy trinity of the base - green pepper, celery, onion.

:ike pp , i put them in anything that requires peppers.
But if trying to ' colour match' I slice them thinly and add them to Thai green curry . stir fry , or cut the tops off and fill with mince , onion , herbs / spices and roast.

As pp said Chinese beef in black bean sauce.

They are good in chilli or spag bol but I'd do 1:1 ratio green and red peppers for either of those.

Tbh I'd have used them in the jalfrezi anyway - they are great in curries.

Chop up with some chorizo, chicken, onions and garlic, fry off and add wine, stock and cook for half hour or til the sauce tastes good - I usually add chilli too. Lovely with rice

Green ones are the best for cooking with. I stuff them with leftover rice, veg, chicken bound together with chilli sauce, then put sliced cheese over the top and bake them in the oven. They are yummy.
