What to cook with green peppers in?

I bought some green peppers to put in a jalfrezi but every recipe I came across has red peppers in so I used red instead. What can I do with the green ones? I would put them in a chilli but I don’t fancy that. TIA.

I know people that will only eat red but I don't really notice much difference especially if they're cooked. I think people are just prejudiced against green peppers :-(

Make a chilli! Recipes usually ask for green pepper. Or fajitas along with another colour pepper to add some variety

I like them in a tuna pasta salad. I ripped off the recipe from an M&S ready meal.

Diced green pepper
Finely Diced onion (mild white, red or spring onion)
Diced cucumber
Rinsed red kidney beans
Tuna chunks or steak
Cooked pasta (any shape works - penne, farfalle, rigatoni)

Mix together with honey dijon or wholegrain mustard dressing. Lots of salt and pepper.

I don't measure any of it, just eyeball it and adjust quantities according to what I have. It's a favourite summer meal here.

Green peppers are lovely in anything Chinese. Stir fried with any sauce, delicious in beef and black bean sauce.

I don’t cook but I love green peppers so much, my dh puts them in anything and everything.

I agree with this, but Jamie Oliver's green chilli recipe specifies green peppers and is delicious.

Sabzi - I use Madhur Jaffrey's recipe! I thought I hated green peppers but I now buy them to make this regularly.

Any excuse for pickled red onions - love em.

As @DilkushaKitchen says, holy trinity base (green pepper, celery, onion) so excellent for cajun food. I tend to save the green ones for prawn creole, Delicious, and the left overs freeze well, so I can cook a huge batch and have freezer meals.

White chilli is made with white meat such as chicken or pork, and green chilllies and peppers rather than red.
