I'm not a big fan of cauliflower but bought one anyway, just to see what I could do with it. My mum used it 2 ways - attached and served plain, or in a soup with brocolli.

What do you do with a cauliflower?

I'd dithered a bit long over how to cook it, so had to cut some bits out of my already wimpy cauliflower.

Cut into florets then roasted for 25 mins in rapeseed oil salt, pepper and a skoosh of lemon juice alongside brocolli and a courgette that needed using.

Had with chicken sausages and roasted roots. I gave DH 2 small bits and not only did he eat them, he went back for another 2 bits.

I will def do it again. I want to do the popcorn cauliflower too, with sweet chilli sauce.

It's lovely in a veggie curry with chickpeas and spinach.
Or definitely cauliflower cheese for a stodgy comfort food option!

Cauliflower soup is beautiful. Needs to be blended and have cream in it, but it really is completely delicious.
