Alternative to soured cream

We tend to have Mexican food once a week, supermarkets don't seem to stock those small tubs of soured cream any more so each week I'm throwing away half a tub at least. Is there something with a longer (when open) shelf life I could use? I've read I can freeze it but only if you're cooking it not dolloping it.

Do you used double cream usually anyway? If so, Just buy double cream and sour the amount you want, you just add lemon juice.

I always just use Greek yoghurt. I eat it with berries & nuts for breakfast, so can easily get through a tub in a week.

Make something else with it, or use it in something else - you can stick it in a casserole, on a pancake, in a cake mixture. have it with fruit, put it in soup.

Or make your own as PPs have said, and use the rest of the non-sour cream up in ways similar to those above.

I keep sour cream in the fridge for weeks (and weeks and weeks). Yoghurt and sour cream keep way past the date on the pot, even when opened.

I tend to keep it about 7 to 8 days after opening....it seems fine to be honest. Or use it in something else - jacket potatoes and sour cream is lovely.

It keeps forever, like weeks past the date (as long as you're careful to keep it cold, always use a fresh/clean spoon to dip in, and cover it well if it doesn't have a good lid). We buy one pot of sour cream/creme fraiche and keep using it until it's gone - they can be substituted for each other quite easily in all sorts of recipes. I find creme fraiche is more versatile though, so I usually buy that.

It should last for a few weeks in the fridge (ignore the date on the tub).

It will last over a week opened if its stored correctly - spoon out what you need, then cover with clingfilm or one of those stretchy silicone lids.

Philadelphia diluted by whisking in a bit of milk or water is basically the same s sour cream. About a 3rd of a tub makes enough soured cream for a meal, and the rest of the tub can be used for lunches or will keep a good while in the fridge.

I have had some sour cream open in the fridge for about 10 days now. It's still fine - I had some with my lunch.

As others have mentioned, I use Greek or natural yoghurt instead of sour cream now. Like to think it is a little bit healthier too!

Typical ways I use ours so that I can finish a tub over a couple of weeks:

Topping for tacos/Tex Mex/Chilli/nachos/wedges/etc.

In dressings for coleslaw/remoulade/other salads.

Fresh dips.

Mixed into Jacket potato flesh with cheese and chives/spring onions.

In sauces such as stroganoff.
