Alternative to soured cream

We tend to have Mexican food once a week, supermarkets don't seem to stock those small tubs of soured cream any more so each week I'm throwing away half a tub at least. Is there something with a longer (when open) shelf life I could use? I've read I can freeze it but only if you're cooking it not dolloping it.

Sour cream lasts ages in the fridge - why are you throwing it out?

I've had a tub in my fridge for a month now. I've used it for Mexican food, chili, split pea soup, goulash, and to bake with (sub for buttermilk).

I use sour cream and chive dip, and use any leftovers in macaroni cheese.
It's usually on a deal of sorts in Tesco. The second tub keeps ages.

I'll be using the remains of a tub of creme fraiche with tonight's nachos - it's very similar to sour cream

It's been open about 4 weeks, is 2 weeks after its UB date., & smells fine.
I expect to live to post another day.

I'm clearly over thinking it. It comes with just a yogurt pot type lid but shall decant it in to a tub!
