Favourite toastie/baguette fillings

What's everyone's favourite sandwich/baguette fillings?
I'm looking for inspiration!
Vegan/veggie/meat based/cheesed based etc
What works really well together and is not run of the mill.

A cafe near here does the BEST egg mayo baguettes - egg mayo, super-thin slices of celery, crisps, crispy chilli oil.

I like a soft bread roll with a squashed onion bhaji in it, plus salad, mango chutney and a bit of minty yoghurt.

Sounds delish!

Sliced chicken, mayo, sweetcorn and salad yum!!

Steak, red onions and I can't stress this enough... Fuckton of melted cheese

Pastrami, cheese, gherkins, American mustard.

My favourite too! I add crispy onions.

Cheese, marmite and onion toastie is amazing.
Apple and cheese also nice.

Mortadella, pesto, mozzarella, red onion, ciabatta, with fresh rocket added in after toasting

Garlic butter fried mushrooms, mozzarella, parmesan

I’m so boring!
I like a cheese and red onion toastie and if baguette, bacon and Brie or ham, pickle, cucumber and onion.
nothing groundbreaking, in fact it’s totally run of the mill!
Bloody love a sandwich/roll/baguette.

Roast beef and chutney
Turkey and stuffing
Ham and mustard
Smokey bacon crisps and ketchup

Today I had a very lovely mushroom, cheese and red onion toastie from r lunch. It was so nice I made another for my tea.

I fried the onion and mushrooms in a little butter and oil until nice and brown, popped them in a small ft pitta with a slice of leerdammer and toasted it, bloody gorgeous.

• Peanut butter and jam
• Left over roast pork and apple sauce
• Tomato, cheese and onion
• Smoked salmon, capers and cream cheese
• Left over chicken, avocado and pesto- lettuce/onion optional

Spread avocado instead of butter with ham, havarti/edam cheese and sundried tomatoes.

Tuna/bonito in oil with thin slices of onion and piquillo/red sweet peppers.

Curried egg with lettuce

Jamon/prosciutto with slices of fresh tomato and a drizzle of olive oil (if it's Spanish jamon iberico is literally a piece of heaven)

Thinly spread cranberry sauce with roasted turkey, lettuce and thin red onion slices.

Strong cheddar and red onion toastie. I could eat it every day.

Toasted sandwich containing left over cauliflower cheese

Jalapeño, pepperoni and cheese.
Leftover bolognese, keema or chilli con carne with cheese.
Buffalo chicken and blue cheese.
Rarebit topping with or without ham

Corned beef, onion and cheese with brown sauce.
Spinach, tomato, mozzarella and pesto.
