Favourite toastie/baguette fillings

What's everyone's favourite sandwich/baguette fillings?
I'm looking for inspiration!
Vegan/veggie/meat based/cheesed based etc
What works really well together and is not run of the mill.

I love a toasted sourdough baguette with goats cheese, good pesto, rocket and sundried tomato

I like strong cheese, tomato and pesto toasties

Leftover bean chilli, cheese and jalapenos
Leftover spag Bol and cheese
beans and cheese
Leftover meatballs and cheese

I don't think you beat plain cheese for a toastie, but done properly with lovely melty cheese and sourdough

For a baguette - chicken, bacon, avo.

Some might find this boring, but I LOVE good old sweet chilli chicken and melted cheese in a panini / baguette / toastie along with coleslaw and salad to the side. Also, red onions and peppers too.

i also like bacon, Brie and cranberry (turkey and stuffing with that at Christmas time) and I love BBQ chicken and cheese.

Curried chicken (cooked chicken breast, chopped and mixed with fat free yoghurt, mango chutney, curry powder and finely diced red onion) with sliced green grapes, finely chopped celery and shredded iceberg in a Multigrain baguette).

Or ham, homemade apple slaw and English mustard.

I had a very high risk pregnancy and was at the hospital multiple times every week. The hospital used to do these amazing onion bhaji, cucumber and yogurt sandwiches. Jesus, the heartburn! But it was SO worth it!

Spread your bread or roll with mayonnaise and then put on a good dollop of mango chutney. Ideally also spread a little bit of chilli paste on the other side or mix with the chutney. I used to use chilli paste by Mak Tok, which I can't get now, but I expect anything that adds a little bit of a kick and offsets the sweetness of the chutney would work. Now add hard-boiled egg, sliced or chopped up a bit. You could add cucumber or lettuce too. Messy but very good!

Some of these sound absolutely delicious! I will definitely be trying them out!
I'm opening a refreshment kiosk in a park, and wanted some ideas, looks like I've got many!

Philli, smoked salmon and dill with salad and black pepper

Bagel toasted then filled with Tintern cheddar, tomato and spinach

Brie, bacon and mango chutney

Peanut butter cheese and cucumber

Bagel thin topped with tomato purée, sausage, red pepper and strong cheddar toasted

I make a pate thing from an old Cranks recipe -
200g cream cheese
Small grated carrot
100g ground roast cashews
Salt and black pepper
I put a bit of onion powder in and some black onion seeds.

Lovely in a brown roll with salad

Brown bread, horseradish, rare roast beef, thickly sliced tomato, rocket.
Roast beef, cream cheese and bean sprouts.
Grated cheddar with chopped celery, spring onions and mayo mixed into a spread.
Roasted peppers, mozzarella and pesto (also a fabulous toastie or panino).
Iceberg, sliced cucumber, sliced spring onion, sweet chilli sauce, sliced poached chicken, mayonnaise on the top slice of bread next to the chicken).
Spinach and tomato with salt and pepper on buttered bread.

Mushroom and blue cheese.

Strong cheddar and lime pickle

Hummus, grapes, black olives, rocket. Shouldn't work as brilliantly as it does.
