I really fancy a jacket potato. Tell me your favourite fillings so I can fully indulge!

Or my version of ratatouille which isn't ratatouille at all but is how I like it: red onion wedges, mushrooms, chunks of red pepper, garlic, herbs and some cherry tomatoes - all roasted until the tomatoes pretty much disintegrate.

To be served with feta, ideally, but grated Cheddar otherwise.

I bake the potatoes, cut them in half and scoop them out. Mix the potatoes (not too much) with creme fraiche (2dl for 6 potatoes), cheese (strong or even goat’s cheese if you like), salt & pepper and put it back in the skins. You can even prepare it this far the day before if you want. Then bake them in the oven 250 degrees for about 10 minutes. I could live on this!
