I know this sounds bizarre but, cheese and peas (birds eye petit pois). I don’t like baked beans on a JP, I find it makes it too wet. Butter, s and p, grated cheese mixed together and then peas on top! I rub olive oil and sea salt into the skins of the JP before baking.

Chicken/tuna salad (mixed with crunchy celery, mayo, S&P, pickles, hot peppers and some of the pickling vinegar)

Scoop out baked spud and mash with s&p, garlic butter, chopped parsley, top with grated cheese and back in oven or under grill for a few minutes.

Not at all healthy but I used to love getting a Spudulike with savoury mince in my dinner hour.

At home my favourite jacket potato topping is crispy grilled cheddar cheese.

Can't beat beans and cheese, and it must have a salad garnish too.

A cafe in town used to do philadelphia, date and beetroot, that was a really lovely combination.

I'm inspired by the scoop it out mix and bake again people on this thread, I have some chives and dill to use up, so will chop those and mix in to the flesh with cheddar and butter and bake, that sounds v lovely!

Beans and cheese but make the beans better. Fry off some red onions and bacon lardons, add a tin of beans with some of the tom sauce drained. Add some BBQ sauce and smoked paprika. Cook for a bit then put on the spud with some cheese - cheddar and red Leicester mixed.

I had one today because I read that this thread! I had tuna and sweetcorn mixed with salad cream and a bit of grated cheese on top.

I did it for 29 mins in the air fryer and it was lovely and crispy on the outside. Then when I got to the middle it was cold inside! Next time I will have to microwave it first then air fry it.

I bake mine, scoop all the filling out, mix with cheese, salt, butter, chives, cream cheese or sour cream. Back in the skins and goes in oven with extra cheese on top.

This used to be our Sunday tea on cold days! Well, less fancy - no cream cheese or sour cream or chives but nice enough with garlic salt!

It was how Milly-Molly-Mandy's mother made them when Susan went for supper. I remember asking my mother to do the same.

Hot smoked mackerel fillets (skinned) into a wee dish. Beat up some cream and grainy mustard. Tip it over the fish and bake for 15 minutes. Flake it up with the cream. Slice a spring onion.

When the tatties are ready slice the top off and scoop out the potato. Fork through the creamy fish flakes and the spring onion. Wee bit grated cheese on top. Under the grill til bubbly.

Or,

Cheese, mayo, mango chutney/sriracha.

I love a Jacket Potato. Have never double-baked one so will be getting onto that asap.

Fillings wise my favourites are pretty boring

-egg mayo and grated cheese (usually a mix of a couple of cheeses), tuna sweetcorn mayonnaise with beans and cheese, prawn mayonnaise.

I always use Red Rooster potatoes for jackets and never cook wrapped in foil (it makes it harder to get that cripsy skin).

Cheese and veggie chilli (but I prefer the chilli on the side, rather than on top)

Stuffed with cheese and sautéed leeks and then rebaked

Garlic mushrooms (really wish I was having this for tea now)

With quiche and 1970s salad (lettuce, spring onions, cucumber, radishes, salad cream)
