Cookie cutters make crustless pretty sandwiches. DD used to have little Christmas tree ones in December in her lunch box. She may have been a little spoilt. Heart-shaped ones with a loveheart on them. Cream cheese and cucumber were her favourite.
Fish fingers (hot) on sliced white bread with salted butter, a handful of salt and vinegar crisps and ketchup.
Hot salt beef on rye with mustard and slices of pickled cucumbers.
Christmas sandwiches: turkey replaces bread, one slice spread with cranberry, one slice with bread sauce, crumble some stuffing, slice some sprouts, join together like a sandwich.
Tin of red salmon, pepper, squeeze of lemon, chopped spring onions, Helman's, mash it all together. Spread between buttered brown bread add watercress, cut into triangles. One large tin should do 4 rounds.
Also nice are crustless sandwich fingers: work very well with: smoked salmon, egg mayo and cress, ham and cream cheese, cream cheese and cucumber- very dainty and moreish.
Proper club sandwiches with turkey, bacon, tomato slices and lettuce (three slices of bread - lightly toasted)
