What manner of potato would you team with beef bourguignon?

For a big extended family special meal?

Can’t decide between mashed, roast or dauphinois.
Don’t tell me to make all three.

Going to serve with braised red cabbage and one other thing, can’t decide on that either. Cauliflower cheese, fancy leeks? Dunno.

I would go for fondant potatoes and maybe roasted honey parsnips.

Plain boiled old potatoes so your guests can mash them into their gravy should they wish too.

Alternative veg: tenderstem broccoli, cooked and served plain.

I do skin-on new potatoes roasted with thyme. So they can be mashed, or dipped in the sauce.

Mashed with one or two sweet potatoes thrown in too. I now boil tatties with a couple of onions. Sounds mad but they mash well together and adds to the sweetness.
