What manner of potato would you team with beef bourguignon?

For a big extended family special meal?

Can’t decide between mashed, roast or dauphinois.
Don’t tell me to make all three.

Going to serve with braised red cabbage and one other thing, can’t decide on that either. Cauliflower cheese, fancy leeks? Dunno.

we always do it with dauphinoise - also easier to keep hot than mash plus it is more special.

Mmmmm. I'd want a green vegetable alongside it. Steamed broccoli, mangetout, runner beans? Carrots and/or swede always go down well but are best to my mind served not al dente so that's another mushy texture.

As for potatoes, you can't go wrong with potatoes in any form. I can't think of a potato dish I don't like.

Oh, that's interesting how different we all are! Sometimes I think 'if I could have anything tonight...' - and often it's just a pile of buttery. creamy mash that comes to mind, with gravy of some kind (but I'd have it without)

So for me, it would be beautifully creamed potatoes to go with a bourgignon, to eat with a lovely forkful of tender meat and juices.

If it's for lots of people I would do 2 types of potato, probably mash/champ and some sort of roast potato either hassleback or baby potatoes roasted with their skins on with garlic and red onion.

I'm planning a mushroom bourguignon next week and serving with mashed potato and buttered cabbage/kale/leafy green which takes my fancy when shopping. As you've already got a cabbage, then maybe roasted or steamed and buttered broccoli. I think something creamy like a cauliflower cheese or a dauphinoise potatoes would be a bit much (much as I love them).

Just tip some raw new potatoes into a roasting dish, coat in oil, add some whole garlic cloves, and roast for 40 mins. Then squash them gently and roast for another 20.

Small chunks of potato with a sprinkling of dried mixed herbs and garlic granules roasted at the same time as the beef. Carrots in oven too with a spoon of water and knob of butter and sprinkle of thyme.
