Hi, I’d appreciate any help as I’m going round in circles.

I need a vegan, GF and low FODMAP recipe for tomorrow….. The FODMAP thing is mainly no onion or garlic.

Any recommendations?

Just remembered a recipe that might help you in future too - you can make Felicity Cloake's vegan ragu as low Fodmap with the following ingredients...

Serves 6 with rice or gf pasta

75g shelled walnuts
250g chestnut mushrooms
250g firm tofu
NO ONION
1 large carrot, cut into small dice
2 SMALL sticks celery, cut into small dice
LARGE SPLASH OF GARLIC OIL
NO PORCINI (don't have it in usually)
Salt
90ml olive oil, plus extra to serve
2 tbsp tomato puree
1-2 tbsp Marmite, to taste (depending on your fondness for Marmite) (* not properly gf, Tesco own brand is I think *)
1 x 400g tin chopped tomatoes
1 tbsp balsamic vinegar
200ml red wine
1 bay leaf
1 sprig fresh rosemary
Nutmeg, to taste

Lentil bolognaise without garlic and onion, I’ve done this for my DS who has long COVID affecting his sense of taste, give it flavour with a bay leaf lots of basil (no pesto as that has garlic in it). A couple of teaspoons of Nutritional yeast for a savoury flavour. If they can take spicy food add paprika and chilli and red peppers for a chilli, you won’t miss the garlic if you make it spicey

This was actually last year, and I made a roast dinner with vegan sausages and two types of gravy.

I think the thread was re opened by someone searching for FODMAP.

But I might have similar dilemma soon, hence the soup.

Haha! A lovely zombie thread. You're a much more accommodating and patient person than I. I would have thrown in the towel or just served carrot sticks.

I'm low FODMAP because of medical stuff and prefer a plant-based diet.

Seriously I'd be happy with Heinz tomato soup, with 'Free From' seeded bread made into toasted croutons, or a stir-fry based soup made with chopped mushrooms / other vegetables / peppers / cashew nuts and rice noodles in a miso / soy broth.

For seasonings I like ground black pepper, salt and dried mixed herbs, and the liquid from pickled jalapenos.

My DD has IBS so I often cook with the green part of leeks and spring onions. I often make a paella/risotto using these rather than onions. If I have chives I'll chop some over the top to up the onion flavour at the end. I'd go for an all in one veggie paella (use smoked paprika to give that chorizo flavour) and serve some grilled prawns on the side. I know this is a zombie thread, but was looking at recipes for my meal plan next week and gujarati corn-on-the-cob curry could work with non-dairy yogurt replacing the dairy yogurt. I haven’t tried it, but I love Meera Sodha generally.

Re: low FODMAP, I can also eat a lot of foods that are tinned, pickled or baked/cooked that I couldn't manage raw, so can eat small amounts of tinned (or in jars) or roasted tomatoes, spinach, olives, artichokes, green beans, potatoes, jalapeno slices, baked beans, beetroot and gherkins.

I make salads out of various combinations, and can eat Heinz vegan mayonnaise. So something like a side salad of chopped beetroot, gherkin and rice with a dressing is colourful.

Also can eat g-f pasta with a tinned tomato sauce, sliced peppers, black olives, mushrooms, jalapeno slices, and grated carrot. Maybe some green beans or spinach.
