Need help, vegan, GF and no onion/garlic…………

Hi, I’d appreciate any help as I’m going round in circles.

I need a vegan, GF and low FODMAP recipe for tomorrow….. The FODMAP thing is mainly no onion or garlic.

Any recommendations?

I’m scared to ask but how is a lemon not vegan? Can’t cope with anything else of think about!

Sorry @Tulipvase that wasn't fair of me, was more tongue in cheek, was a thing I saw on twitter about a vegan berating tesco for not having vegan fruit due to the wax that is on some citrus fruit.

Thank god for that!

If pulses are okay, chickpea curry and rice could be good. With a bit of asafoetida to make up for the lack of alliums. Mushroom risotto, if it's not too much of a cliche. Traditional meat and two veg/steak and chips type meals but with a different protein. Gluten-free veggie pizza, skip the onions.

Er. What else… massive plate of chips? That fits almost every dietary restriction barring the no-nightshades crowd Grin

A lot of pulses and mushrooms are an no no from a FODMAP point of view.

what stage of FODMAP is your sister on and what's her tolerance of tomatoes like? I have a lot of success using garlic flavoured oil (not the stuff with actual garlic bits in)

I'd be tempted to do something like kebab skewers with variations on them according to dietary requirements (the vegan can have a plant based version and the meat eaters can have pork/beef/chicken or whatever) served with corn on the cob, sweet potato fries, a load of different dips and salads etc, perhaps some gluten free tempura veg if you are feeling creative.

I've also made stir fries that are FODMAP friendly using the garlic oil or a very small amount of the green ends of spring onions. I use gluten free spaghetti That's been cooked and left to dry out again for gluten free noodles.

These carrot burgers but swap the garlic for something?

I agree pasta, fodmaps can be really restrictive in its early stages, hopefully it sounds like the person involved has narrowed it down to alliums? If it's full early fodmaps exclusion diet, I wouldn't even try to cater for it in the same meal as GF and vegan.

DiorForBreakfast · 03/09/2022 16:56

I had to do something like this. I had your restrictions, plus a no fish person, and I forget the other one. An odd mix anyway. I ended up making a sort of buffet of small dishes. Some salad with normal vinaigrette, one with no garlic. Something meaty. A dish of marinated grilled vegetables.
Some smoked trout with relishes served separately, ingredients identified. Some other bits I forget now. GF bread for all. It might sound a lot of work, but it really wasn't, and the FODMAP/no garlic person said it had inspired him to be a bit more adventurous in his catering.

Pretty much exactly that. I asked her and mushrooms are ok. I can’t remember it all but basically no onions, garlic and only the green bit of leeks for example.

Think I might go down this route actually. A buffet style thing.

Pho / ramen with rice noodles and green beans, red pepper, bean sprouts, mushrooms, a ton of fresh herbs and anything else you want to add and cook chicken or steak separately for non vegans.

ThisisCollie2022 · 03/09/2022 17:12

Mushroom risotto? With lemon thyme and olive oil bruschetta

Grilled courgettes and tomatoes on the side?

ThisisCollie2022 · 03/09/2022 17:33

(GF bruschetta, obviously)

I know it's difficult OP, I just baked a vegan GF chocolate cake and it was very difficult to bake.

Thanks. I did think about risotto but without onions? I’m not sure it would work.

Well the last time I made it I used leeks, it was very tasty! And you can use leeks (I think?)

True, just the green bit though I think which seems a bit limiting. I do have some though, I’ll ask my sister.

What about a mix of small dishes? Indian food is very easy to make low-fodmap and most main elements taste better when left to stew and reheated the next day. Look at Jain dishes (vegetarian with no root vegetables so no onion or garlic).

Thank you.

The FODMAP isn’t vegan or veggie - it’s just the perfect storm of awkward dietary needs!

Unfortunately, FODMAP free diet isn't a choice. It's used alot to get ibs/ibd undercontrol and to also prevent flair ups. I'm currently having to do after 9 weeks of what we thought was food poisoning but now is suspected ibd (ulcerative colitis or crohn's).

It's amazing you're supporting your sister as honestly it's a nightmare! I used to be able to eat anything and now I can't have anything I've not made myself. It's extremely isolating, so flipping good on you for helping her be healthy. Tad late to the party but came across this post after searching fodmap

My sister has always made no demands with regards to her diet but if I can somehow manage it, I will. It was just the whole combo of vegan, GF and FODMAP seemed impossible. She is now lactose free too lol!

In the end I made a roast but with vegan sausages. I think it was appreciated by all. I’m now facing a similar dilemma - but soup based……

Low fodmap soup is hard unless you can get some low fodmap stock cubes from your sister? If so, HFW's parsnip & ginger soup with garlic oil and celery instead of onion is great. May have to use lactose free milk, most supermarkets do their own brand of this.

Mushroom risotto is probably your best bet or a vegetable noodle broth being carefully of ingredients. I would say you could look add steak to either but probably ought not to say that as a vegan. We have some very specfic and contradictory diets in my home. Please don't serve a Mushroom as a pretend steak though it's so sad.

Eeek 🙈 try fodmap supermarket. They have low fodmap stock and also came across I really good recipe book on there too. I will see if I can find any soup recipes in it for you. I'm still a newbie to the fod thing and it's so flipping confusing

UniversalTruth · 06/08/2023 23:15

Becky Excel usually gives low Fodmap and vegan alternative ingredients for all her recipes - I have made many of her bakes and they've all worked, although I've not needed to make the vegan substitutions.

OhcantthInkofaname · 06/08/2023 23:18

So tasteless and drab?
