I got a bit carried away.. any ideas what to do with it?
Don't have any cabbage or greens in or I would make bubble and squeak!
It's got whole grain mustard in already

Potato cakes. Mix with flour and salt until make a light tacky dough. Fry lightly on both sides.
Pop them in the fridge and use as required. Will keep for a few days. Or freeze for a few weeks.

Good for samosas. Buy the pastry in a big supermarket and deep fry or oven with oil spray on them to cut down on oil. Maybe they might work for an airfryer too.
