I got a bit carried away.. any ideas what to do with it?
Don't have any cabbage or greens in or I would make bubble and squeak!
It's got whole grain mustard in already

Croquettes or fish cakes? - oily fish would be fine with the mustard, as would most cooked meats
potato scones - so fine…

freeze it?

KimMG · 29/08/2022 16:34

Add an egg and soe flour ten any seasoning you'd like, make into 'patties', shallow fry, turning once - voila - potato cakes - not very healthy, but nice !!!

Florencenotflo · 29/08/2022 16:35

Freeze it? Or make fish cakes, or gnocchi? I usually make double and freeze it to use at a later time. It defrosts fine, microwave it, stir, but more butter and seasoning. Perfect.

BarrelOfOtters · 29/08/2022 16:43

Tinned fish or whatever and make fish cakes, you could freeze them. Use to make potato bread. gggiraffe.blogspot.com/2010/06/nigellas-potato-bread.html

add cheese and fry and have with an egg.

PeloAddict · 29/08/2022 16:44

I would freeze it but my freezer is rammed Grin
I've just batch cooked 4 portions of beef stew and mash and 6 of cottage pie hence the freezer/mash overload

Got some beans and sausages so wonder if it would work layered with that and some cheese...

I've never made them but they sound appealing! I could have those with a fried egg and beans for tea tomorrow Grin

Fish cakes, topping of fish pie, add grated cheese and flour and fry for cheese and potato patties, fried with corned beef and any veg for corned beef hash... Cold mash is endlessly useful

Ooh I have corned beef in!
It's the lack of veg that threw me - I've used every scrap up batch cooking so the only stuff I have is onion and a bag of spinach. And cherry tomatoes. Wonder if potato cakes would work with sweetcorn?

InsertPunHere · 29/08/2022 19:09

Spinach works as a cabbage/kale replacement in bubble and squeak/colcannon. As does wild garlic, not that it's in season. Just chop and wilt the spinach. Great with a poached/fried egg on top.

IbizaToTheNorfolkBroads · 29/08/2022 19:22

Have it with sausages tommorow

PeloAddict · 29/08/2022 19:58

I'm going with potato cakes! Mentioned them to DP by text who said "potato cakes?! Fuck YES" so there we go Grin

Potato cakes with fried eggs is the food of the gods.

LateSummerLobelia · 29/08/2022 20:01

The pancake idea was good if you had not already decided! You could add flour and milk and make savoury pancakes (due to the mustard) with a white sauce with ham or smoked fish and spinach! (Now thinks about making way too much mash......... )

BCBird · 29/08/2022 20:01

Freeze it. I often do this, freeze left over chicken and mid week.put the two together with frozen veg and have a roast chicken dinner after hard day at work. Yummy and easy.

Add some boiled peas and chopped walnuts and make croquettes.

Havehope21 · 30/08/2022 11:38

potato bread is lovely - wonderfully soft. Croquettes are also a good bet - with lots of cheese!

NeverDropYourMooncup · 30/08/2022 11:44

See also

Gnocchi (flour, roll into a sausage shape, boil until they float to the surface, apply butter, sage and sea salt)

Add to cooked leeks/broccoli/other veg in stock, liquidise = soup (to be served with potato bread) with no need for flour, cream, yoghurt or other thickeners

Roll into balls with frozen peas, dip in egg, then breadcrumbs with or without parmesan or pecorino, fry, bake or air fry. Add garam masala/chilli/turmeric and some small cubes of paneer (optional) before rolling for a spiced version. Or into patty shapes.

Yep this works 2 of my children like this as long as you cook the sausages or at least brown them first before mixing with the beans and topping with cheesy mash.

The child won't eat mash in any form.

Bookmarking these!

Potato cakes are definitely for tonight. I opened my eyes this morning and got "would you still be making those potato cakes later?"
GrinHmm let me drink my tea first!

Potato pastry is nice, make shortcrust recipe as usual but don't t add water, instead add mashed potato the same weight as the fat.

ChubbyCapybara · 30/08/2022 19:39

Potato flatbread is another good one, quick to make and versatile. Use as a wrap with fillings of choice, or to accompany a meal that requires bread on the side.
