My go to Delia recipe

ANYA POTATO SALAD WITH SHALLOTS AND VINAIGRETTE

INGREDIENTS
2 lb (900 g) Anya or other new potatoes, washed
6 shallots, peeled and finely chopped
4 tablespoons freshly snipped chives
salt
For the vinaigrette:
1 rounded dessertspoon sea salt
2 cloves garlic, peeled
1 rounded dessertspoon mustard powder
1 tablespoon balsamic vinegar
1 tablespoon sherry vinegar
5 fl oz (150 ml) extra virgin olive oil
freshly milled black pepper

METHOD
Steam the potatoes over a pan of boiling, salted water, covered with a lid, for about 20 minutes until they are tender.
Meanwhile, make up the dressing. Begin by crushing the salt quite coarsely with a pestle and mortar, and then add the garlic. As you crush it and it comes into contact with the salt, it will quickly break down into a puree. Next, add the mustard powder and really work it in, giving it about 20 seconds of circular movements to get it well blended. After that, add some freshly milled black pepper.
Now add the vinegars and work these in in the same way. Then add the oil, switch to a small whisk and give everything a really good whisking. As soon as the potatoes are cooked, cool them in a mixing bowl for 10 minutes, then stir in the vinaigrette and shallots while the potatoes are still just warm. Now add the chives and give everything a good toss to distribute any dressing collected in the base of the bowl and transfer the salad to a serving bowl.

I did one yesterday with horseradish in the mayonnaise to go with smoked mackerel. It was very nice!

Vinaigrette rather than mayo. The Delia recipe looks pretty much perfect.

i always use a very light mustard mayo (dijon is best) plus very finely chopped cornichons and capers (and if there are no vegetarians I use finely chopped pickled herring - I'm Jewish, what can I say) and fresh red onion (lightly diced). Plus carpeted (feeling cheffy now) with fresh finely chopped parsley. I also boil a couple of eggs and dice them and put through the mixture.

Or - else - my absolute complete and utter favourite is a traditional Russian Olivier Salad.

Baby new potatoes, cut in halves and boiled soft.
Heinz Mayo
Finely chopped chives
sea salt flakes

Drain potatoes, salt and chive them, then add the mayo…

The mayo:potato ratio is very important- you don’t want it sloppy but also not claggy dry either. I love mine warm but cooled is equally as good. I sometimes add chopped garlic too or some truffle paste.

I try not to make it often because it’s only me and DP here and half a plate of PS each can’t be healthy 🫣

Roast baby potatoes with olive oil, sea salt & mixed herbs.

When cooked & cooled, chop into chunks.

Mix good quality mayo & whole grain mustard and add the potatoes.

Add some chopped spring onion.

If there are no vegetarians I add chopped smoked bacon cooked until quite crispy.

I am absolutely craving potato salad now! The last bbq I went to had three different types and I think I might have eaten more of that than anything that actually went on the bbq.

My mum always used salad cream and we were always a bit sniffy about it but actually sometimes it's what hits the spot

Its not often that people get potato salad right. The main error is not having soft enough potatoes.

The ones in the shops are like eating bullets

@bellac11 - totally agree. A low & slow roast is the only was you go with baby news do they go all nice & squidgy <starts shopping list>. DS(16) loves them.

I use half mayonnaise, half natural yogurt. Maybe chives or spring onions. Lots of black pepper.

My current favourite is boiled jersey royals with very generous dollop of mayo, little bit of salad cream and a teaspoon of Dijon mustard, with finely chopped spring onion or red onion, chives or mixed herbs, salt and pepper. Delicious and better on the second day

Have experimented a lot and the Dijon mustard definitely adds extra flavour
