Quick and easy main meals for hot days & trying to lose weight

RockingMyFiftiesNot · 08/07/2022 16:44

Doing my meal plan for next week and looks like we're going to have a few days when it's going to be very hot, so I'm not going to feel like cooking. Only two of us so won't be barbecuing.
I'm trying to lose weight, but already have salad for lunch so don't particularly want it again.
My mind's gone blank, would appreciate help with ideas for quick n easy little or no cook meals that will appeal to DH also ( he has no weight to lose!).
Thank you

Cold r/quiche
Veg crudités and dips

elaeocarpus · 08/07/2022 16:47

My frittata disappeared

lovelyjubblyjubilee · 08/07/2022 16:58

Lamb skewers (under the grill if you don't want to BBQ),
stuffed pitta's,
crustless salmon quiche?

MrsOwainGlyndŵr · 08/07/2022 17:04

Not quiche if you're on a diet!! Think of the amount of fat in the pastry.

I'm having salmon filet and green beans this afternoon.

Steak/lamb chop/chicken breast and green veg
Omelette
Chilli with lots of beans and not much rice
Ratatouille

lovelyjubblyjubilee · 08/07/2022 17:05

Vietnamese rice paper rolls?

If you use the old slimming world recipe for quiche it's very low fat.

No pastry, just a mix of eggs, fat free cottage cheese (grated cheddar as healthy extra but not actually needed), chopped ham, mix of random veg.

It looks like cat sick before you cook it but when it's done it's actually really lovely.

Thank you. Guess I could make a chilli/similar before it gets too hot then heat up, although wouldn't normally choose to eat chilli when it's 28 degrees.
Been eating a lot of eggs, but do like frittata/crust less quiche, good idea thanks.
Something like skewers/chicken/meat:fish and veg meat the criteria thanks.
Appreciate all the above suggestions, would appreciate more as I think I'll be trying to watch what I eat most of the summer.

Couscous salad - leftover are great in a lunchbox the next day
Open prawn sandwich
Vietnamese rice noodles and chicken
Fish tacos

SimonaRazowska · 08/07/2022 17:18

stir fry

Yodaisawally · 08/07/2022 17:20

Greek salad
Garlic chicken and salad
Fritatta
Spanish omelet
Any kind of salad with lean protein
Vietnamese noodle salad

Do a small bbq for the two of you? We do. I won't be cooking in the kitchen next week, it is south facing with no blinds shade and it hotter than hades.

RockingMyFiftiesNot · 08/07/2022 17:23

Thank you some lovely ideas. Have had a bit of a stressful week and just not getting my head around the food plan which I don't normally have a problem with.
Thank you all x

It's a bit too warm for me where I am today so I'm having a baked salmon fillet with asparagus, and a couple of new potatoes. Healthy, filling and not too much when trying to lose weight

Snoopymcsnoopface · 08/07/2022 17:35

I also regularly do cajun spiced chicken thighs with homemade coleslaw using Greek yogurt and Chipotle. That's healthy and delicious and also chicken thighs marinated on fresh garlic and coriander, browned off and roasted with carrots, sugar snap peas, and parsnip tossed in some cumin.
I then have that with a homemade yogurt cucumber and mint dressing on the side.

Oooo following

Georgyporky · 08/07/2022 18:06

I find that using the hob heats up the kitchen, but the oven does not.
Tray bakes are good, & fuel efficient as well.
This is the sort of thing I mean, but invent your own combos : _

We do that hairy dieters one & it's lovely

Also, any kind of white fish fillets on green veg splash of white wine & lemon & herbs/salt & pepper & roast for 15 mins is lovely & light, can add cous cous if you want

MrsOwainGlyndŵr · 09/07/2022 00:42

So like a kind of baked omelette then?
Not quiche if it has no pastry, whatever SW say.

Lol I know I do miss the pastry sometimes!

Another idea is to use a couple of wholewheat tortillas as a base rather than pastry.

chiffchaffchiff · 09/07/2022 10:50

These open quesadillas from Jamie Oliver's 7 Ways are quick and easy. I often use mini tortillas and a muffin tin instead of doing two big ones in a normal pan.

this is delicious and surprisingly filling and frying the mince takes literally 5/6 mins

Pork Mince Lettuce Cups

Thinly slice an onion and grate a carrot - marinade in white wine vinegar, some sugar/sweetener and a pinch of salt while you do the rest.

Chop half a red pepper, some spring onions, a fresh chilli cucumber and a few roasted salted peanuts into small pieces.

Fry pork mince with some garlic and ginger (dried if you like) until no pink bits remain (about 5 mins) sprinkle in some 5spice, soy sauce, rice wine vinegar and/or fish sauce and cook for a minute more.

serve in little gem lettuce leaves with the (drained) carrot and onion and all the other bits on top with a drizzle of hoisin sauce

Caminante · 09/07/2022 11:18

I'm a big fan of ready made Spanish omelette, high in protein and not as much fat as if you'd made it yourself. So yummy.

JustAnotherViper · 09/07/2022 12:15

Caponata- really simple to make, filling but light and tasty.

QuestionableMouse · 09/07/2022 12:20

www.hellofresh.co.uk/recipes/mango-chutney-curried-chicken-wraps-621cab2de1ac886b5142d90e are lovely, and you leave off the wedges. I added carrot and more salad last time, made them nice and fresh.
