What else can I do with leftover pesto?

Had a jar in the cupboard so did the usual with pasta for the kids.

I’ve about half a jar left over, any suggestions which are quick and easy?

Spread some on puff pastry, then wrap a piece of salmon in the pesto-y pastry.

Stir some into potato salad,

spread onto cod or salmon then wrap in foil and bake

use as a topping for a baked potato with some yogurt

stir a spoonful into cooked rice

Mix it with crème fraiche or sour cream for a dip or jacket potato topping.

Stir into bolognese or add some olive oil to thin and drizzle over salad leaves.

Marinate chicken.

Risotto with a dollop on top to stir through. Minestrone soup with pesto stirred in. To be honest mine sits happily in the fridge for a couple of weeks waiting.for the next outing

Bean salad.
Fry a finely diced onion until soft, add a red pepper and a couple of sticks of celery (also finely diced) until the onions have gone a little bit golden. Sir in the pesto and heat through. Turn off heat. Add a cup of cooked broad beans and a drained tin of cannellini beans. Shred some green leaves like rocket, spinach, basil or watercress and stir through. Best served warm but also great cold.

DS likes pesto pasta and just keeps it a couple of weeks in the fridge using about a quarter at a time. It takes weeks to grow anything if he doesn't finish a jar.

Dress green beans and or broccoli with it.
Smash potatoes down with it.
Add to roast salmon fillets

Put it on a plate / something flat in spoon sized dollops. Put it in the freezer. When frozen solid, put the dollops in a freezer bag, and then when you're cooking anything like bolognese / whatever, chuck a couple of dollops into the pan.

Scoop out a courgette and oven bake it 10 mins. Mix pesto with some plain cous cous. Fill courgette with cous cous. Add Brie or other cheese and grill for 3 mins until melted. Absolutely delicious - Jamie Oliver 15min meals veggie book!

I just keep it in the fridge until we want it again. It keeps ages, especially if you scrape down the sides and cover the surface of the pesto with a thin layer of olive oil.

DH spread some on puff pastry then topped it with feta, asparagus and sliced courgette. It was delicious.

I used to male chicken nuggets with it when DC were young. Use the pesto instead of egg to make the breadcrumbs stick. Freeze on trays (so they stay separate) and bag them up once frozen. Bake in the oven, they don't need frying.

Spread on pastry and make a roast veg tart
