What else can I do with leftover pesto?

Had a jar in the cupboard so did the usual with pasta for the kids.

I’ve about half a jar left over, any suggestions which are quick and easy?

It's nice dolloped in an omelette, or a spoonful in your roast chicken gravy.

I think it's Nigel Slater but fry a chicken breast, when it's almost done slather in pesto. Put a few slices of mozzarella on top and either flash grill or flip it cheese side down in the pan for a minute and disregard the mess. Delicious.

Same as pps we just leave the jar in the fridge until it has been used up. (Occassionally we throw away the very end of it if it's moudly but it lasts for a few weeks)

I would use in bolognese, kids have pasta and pesto, occassionally on pizzas, sometimes make pesto mayo to go in sandwiches or spread on chicken. I only ever use one or 2 teaspoons at a time so it lasts a long time.

I saw a TV chef add an entire jar to a recipe (possibly an omlette) "so you wouldn't be left with half a jar" but I thought that would be horribly oily and salty.....and what's wrong with having half a jar of pesto in the fridge...??
