Hi everyone!

I wanted to create a huge veggie meal ideas thread where we can all add our favourite meals, recipes and tips for vegetarian food.

Most weeks we will have :-

Spicy mixed bean chili, rice and nachos with melted cheese and salsa,
Veggie lasagne/lasagna with garlic bread
HM tomato soup and part baked rolls with cheese in
Sausages, mash, vegetables, Yorkshires and gravy
Fritata and green bean salad
Veggie spag bol with garlic naan
Pesto pasta with Quorn escalopes
Vegan pukka pie with mash and seasonal veg,
Mushroom risotto and rocket salad
Giant salads like Pizza Express do.
Vegetable kebabs with dipping sauces
Veg stir fry with rice noodles, udon noodles etc
Pizza with Quorn ham on doing Haiwain style
Vegetable burgers in a brioche bun with chunky chips
Fake fish and chips
Halloumi fingers with peppers, carrots and other veg sticks
Cheesy potato bake
Spinach and ricotta pasta
Mozarella dippers on spinach, rocket with a salsa dip
Fake KFC bucket
Veggie dogs and french fries
Jackets with cheese and beans
Cheese and potato pie with carrots and peas

I do eat meat but dd doesn't so we eat veggie mostly when she's home from university.

Various curries eg chana dal, mushroom paneer and spinach curry, gobi aloo bhaji, aubergine tikka masala.

Not vegetarian but have lots of vegetable based meals and DP is Muslim so no pork too.

Great thread. DH is cutting down on meat and I'm quite happy to.

falafels in pitta bread with salad/tzatziki
veg curry/chilli
frittata/omelette with salad
jacket potatoes with beans/cheese/salad
Egg and chips :-)
veggie pies with roasties/veg
veggie sausage pasta - chopped up richmond sausages with loads of peppers/mushrooms and stir in phildadelphia.

The chilli cheese sauce is based on a dish my local pub makes. Fry a red onion and 3 peppers till softish, add 3 tins beans of any sort, passata and spices. I usually use chilli powder, smoked paprika, ancho chilli powder. Simmer till saucy and peppers are cooked. Top with cheese sauce and bake till bubbly. I serve with those bowl nachos to scoop up.

I have recipes from books / online for the rest. Let me know if there’s any you want.

Shakshuka fries: the vegetable component of Shakshuka spooned over a bowl of chips with crumbled vegetarian feta.

Veggie sausage, orzo and veg casserole
Cook sausages
Fry onion and garlic
Add packet of tomatoes (cut up but not tinned tomatoes)
Add teaspoon of paprika and tumeric
500ml veg stock
Add handful of chopped broccoli
Add orzo pasta
Stir and add peas and sweetcorn
Once cooked (usually 8-15 minutes, I check this by testing the orzo), add sausage and serve! (I also sometimes add cheese and chives to serve)

Chickpea enchiladas

Heat oven to 200C/180C fan/gas 6. Heat the oil in a frying pan and add the onions, peppers and half the garlic. Cook for 15 mins, stirring now and then until the veg has softened. Add chilli powder (I use a tiny amount of mild), paprika and cumin then Add the chickpeas turning them over in the mixture so they cook through, about 5-10 mins. Add the chopped tomatoes and remaining garlic and remove from heat.
Divide the mixture between the tortillas, then fold the sides in and roll them up. Pour half the sauce into a baking dish, then place the enchiladas on top, side by side. Dot over the remaining sauce and sprinkle over the grated cheese, then bake for 20mins ish until golden brown.

Cream cheese pasta

Start cooking pasta (any shape! I use shells or tagliatelle usually)
In a pan on medium heat put 1 tub cream cheese, let it melt, add spinach (loads as it disappears!), once wilted, add mushrooms and cook for a few minutes, add peas and a bit pasta water until it looks like a sauce. Then add herbs of choice (I use chives or basil) add pasta and serve with cheese!
