Hi everyone!

I wanted to create a huge veggie meal ideas thread where we can all add our favourite meals, recipes and tips for vegetarian food.

Most weeks we will have :-

Spicy mixed bean chili, rice and nachos with melted cheese and salsa,
Veggie lasagne/lasagna with garlic bread
HM tomato soup and part baked rolls with cheese in
Sausages, mash, vegetables, Yorkshires and gravy
Fritata and green bean salad
Veggie spag bol with garlic naan
Pesto pasta with Quorn escalopes
Vegan pukka pie with mash and seasonal veg,
Mushroom risotto and rocket salad
Giant salads like Pizza Express do.
Vegetable kebabs with dipping sauces
Veg stir fry with rice noodles, udon noodles etc
Pizza with Quorn ham on doing Haiwain style
Vegetable burgers in a brioche bun with chunky chips
Fake fish and chips
Halloumi fingers with peppers, carrots and other veg sticks
Cheesy potato bake
Spinach and ricotta pasta
Mozarella dippers on spinach, rocket with a salsa dip
Fake KFC bucket
Veggie dogs and french fries
Jackets with cheese and beans
Cheese and potato pie with carrots and peas

I'm going to attempt a nut roast this Sunday. I usually do Linda McCartney sausages or vegetable pies of some description instead of meat but I'm currently looking at recipes for a nut roast. .
Does anyone have any tried and tested foolproof nut roast recipes that they don't mind sharing?

Can't think of much else!
I do a scrambled tofu supper-thing. Just fried tofu in turmeric, chilli, chilli jam and soy sauce, with rice and Korean chive pancake or gyoza.

Pasta puttanesca (minus the anchovies) I use a Delia recipe.
Roast veggies layered with couscous and rocket leaves with feta and harissa (again, I think this was originally a Delia recipe)
Spanakopita with salad and mini potatoes cooked in the oven in a roasting tin with olive oil, garlic and seasalt.
Baked broccoli and orzo (with lemon, chilli and walnuts) from the Roasting Tin book.

A really inauthentic storecupboard version of pasta e ceci
Risottos - with whatever veg I have or just with peas and lemon. The lettuce risotto in the Mumsnet cookbook Top Bananas is good.
Soups with whatever veg I have, the ones I make most often are probably a semi blended carrot soup, or a minestrone.

A couple of simple ones from me, more to mark my place so I can come back:

Roast veg, with Linda McCarrney chorizo sausages and halloumi
Pasta with peas, broccoli, pesto, and goats cheese (I do this as a pasta bake with the cheese on top)
Chickpea curry
Vegetable lasagne - I use asparagus, peppers, spinach and leeks, with pesto instead of tomato sauce
Stir fry with noodles
Fajitas
Lazy shop bought quiche, baked potatoes and salad

Veg and lentil cottage pie

Veggie sausage casserole - I prefer cauldron sausages and I adapt the veg to whatever we have in

Pastry tarts with cheese/ veg/ pesto/ whatever like This one

Creamy leek pasta - cook pasta, finely slice leeks and soften in butter and garlic oil - add some splashes of pasta water to help leeks really soften down. Stir in cream at end, black pepper, grated cheese and stir through pasta

Roast veg with garlic, herbs of choice,
drizzle balsamic vinegar, feta cheese and pasta

Veggie fajitas (we’re having this tonight) with various veg, fajita spices and tin for mixed beans as filling plus the various dips, cheese etc

Spinach and chickpeas with crusty bread

Different curries - interested to see the different ideas on this thread though

Spanish omelette with salad and crusty bread, or make it a veggie frittata. Or French style omelette with salad and chips

Falafel in flatbreads with hummus, salad, sometimes chips if being greedy. Sometimes make own flatbread just with greek yoghurt and flour

Homemade pizzas - either the yoghurt and flour pizza dough recipe or a proper one with yeast if more time. I do a sauce with lots of veg blended in, mainly for DD but we always have some in the freezer so often use for pizzas

Risotto with whatever veg/ herbs we have in

Soups - either veg and red lentil or cabbage and white bean are favourites

Fritters - courgette and feta, beetroot, spiced carrot ones. This started from weaning but I really enjoy them so often do them now for weekend lunches, sometimes with poached egg

Chilli - either with quorn or just veg and beans/ lentils

Stir fry with noodles and Peanut sauce

Courgette and tomato gratin - a Delia classic I absolutely love and this thread has just reminded me I want to make again soon

DH just made the most incredible veggie dinner tonight. Roast aubergine with spiced sesame and tomato sauce, coconut yoghurt, couscous and roast crispy kale.

I do a lovely crunchy sesame smoked tofu with very herby rice and steamed greens.

spinach and feta filo with sun-dried tomatoes, toasted pine nuts and dill
home made pizzas
macaroni and cauliflower cheese with grilled herby tomatoes

Effortless dinners:
mozzarella and tomato gnocchi bake
veggie chilli
veggie tortilla

Mary Berry's aubergine lasagne (I usually roast a load of other veg at the same time to make something else with later in the week)

Cheats risotto where you add all the stock at once and let it simmer and stir in some cream cheese at the end to get the right texture - at the moment it is primavera with leeks asparagus, tenderstem broccoli and peas. (I usually save the asparagus and broccoli stems and use them to make soup.
