DD16 planned to cook a pesto goats Cheese rissotto with it then forgot to put it in 🙄🙄🙄 typically she objects to it in spaghetti bolognese...

Another vote for saag aloo!

Batch cook it and freeze it in portions. IMO it’s one of those dishes that only improves with defrosting and reheating!

As pp said, do a curry or do a different type of risotto. My kids love risotto and eat any type of veg hidden away in there :)

I'd cook it with onions, garlic and sun dried tomatoes then put it in filo pastry with some feta, dill, mild chilli and toasted pine nuts.

Sauté with onions, lots of garlic and a tiny pinch of turmeric powder. When wilted and reduced add some prawns, chopped coriander and green chillies. Enjoy with basmati rice.

Oh. Depressingly this might be the solution. DD does not do spinach in bolognese or curry....

Filo something sounds good. So does the cannoli, but I haven't got the shells.

I'm very tempted to get some prawns for the prawns idea

Green pasta! Wilt the spinach in boiling water with a couple of cloves of garlic. Blend spinach with the garlic, olive oil and some cheese, salt and pepper. We often add peas and broccoli to the blender as well to make it extra green. Serve with spaghetti. It makes a really quick fun colour sauce packed with veg and you can call it 'hulk' pasta or something to make it sound even more fun if DCs object.

If you buy fresh lasagne sheets you can roll them around the filling in the same way - it's actually easier than stuffing it into tubes.
Cannelloni in all but name.

spinach risotto pie is very popular in our house. Ours is a Cranks recipe, but this looks very similar.

Wilt the spinach in a big pan with some chopped garlic (from a jar is fine). It'll seem loads but cooks down quickly.

Grate in odds & ends of cheese - older & more dried out the better! Add a tablespoon of tahini or nut butter. Add basil or oregano or, honestly, mixed herbs - a teaspoon or so if dried.

Hand blend the lot or transfer to a food processor.

Cook a bag of pasta.

Combine the two in whichever pan is bigger.

Serve with salad, parmesan to grate over it & garlic bread if available. Leftovers go in lunch boxes, or shove in the oven with a cheese sauce topping to make pasta bake.

If you have other leftover veg, chop it small (mandolin if you have one) & saute gently before you add the spinach to wilt down. You can also add sundried tomatoes for a change.

We have variations on this at least once a week including tonight. It's the world’s most idiot proof cheap dinner...I always feel quite virtuous about how much veg I'm shovelling down my teenagers!

Spinach and smoked salmon pasta/gnocchi.

Wilt it and drain it thoroughly. Add juice of one lemon, then add smoked salmon trimmings, pot of half fat crème fraiche (it's better with full fat), heat it until it bubbles. Cook gnocchi or pasta at the same time and chuck it all together. Serve in bowls.

Fast, not dear (don't use slices of smoked salmon or skip it) and my teens can cook it themselves (very forgiving of fuckups). You have to drain the spinach
