DD16 planned to cook a pesto goats Cheese rissotto with it then forgot to put it in 🙄🙄🙄 typically she objects to it in spaghetti bolognese...

I make this a lot. It’s easy to adapt to fit whatever you’ve got in the fridge.

Ocado sell it as well. I love it with walnut ricotta stuffing that DH makes. Also a local Italian shop sells it.

I'd do a veg lasagne.

Roast some cherry tomatoes
Sauce of juice of 1 Lemon, 400ml vegetable stock and about 1/3rd tub of cream cheese
Parmesan
Spinach

Cook some pasta, mix in the sauce and parmesan, wilt spinach
Top with the tomatoes.
